I'll give this bread recipe a try. I use a sponge and soaker recipe for my regular bread that I converted to sourdough. I really like it so I'm sure I'll enjoy your recipe for these buns. They look yummy.

Yum 😋 I recently found your channel and I’m very grateful that you take the time and effort to teach us how to bake with fresh mill flour. So, since watching your channel I’ve bought a Mill and a Bosch and my daughter is getting some wheat from Azure and giving me … I’ve got 3 sourdough starters (3 different grains) and made some delicious dark rye, your wonderful cinnamon rolls with dates and a few different varieties of breads, I will be trying Kamut soon. My husband is wondering if you would show us how to make sourdough bagels! We know the dough is very stiff and we wonder in the compact Bosch motor will be able to mix enough for 12-18 bagels? You mention kneading for 30 mins. Is that by hand or machine? Seems very long for machine kneading.
With Fresh Milled Flour, kneading takes a lot longer to get a nice pillowy soft bread. So, with a machine, typically it takes 20-30 minutes to get to that beautiful stretchy window pane stage. Of course, it will vary with everyone and different machines. 🙂
However, I see so many people discouraged after kneading for only 5-7 minutes like traditional white flour. It is one of the keys to getting it so soft.

Why do you spritz with water?
I like to add a little steam in the oven and on the crust to form a thin crisp layer so the buns hold up. It is not required, I just like how it finishes them up!
