Love the division of labour, G sands and the guys have a tête-à-tête 😊. But a great and not so easy job hauling those beams up to the roof. The twisted beam adds a quirkiness that blends with the rustic appeal. Great video as usual.

Well done moving right along! You can work with the twisted beam, it will just take time cutting each rafter individuality to fit. Are the rafters going to push against the walls or sit on top? Typical construction in the Azores the rafters push on the walls and the sides of the ridge beam so the beam does not have to carry half the roof weight and every 2.5 to 3 meters they have a horizontal beam tying the walls together forming sort of a truss.

It's an old building so a twisted and bent ridge beem will be fine. Maybe it would look odd if everything you put in there is to striaght if you understand me. Anyway it's looking good so onwards and upwards.
I don't know if it would work but if you had a bracing plate where the beams meet, if you had 10mm thick steel on the beam that isn't twisted you may be able to screw into the twisted beam and pull it straight - if you could get a piece of 10mm steel and get some holes drilled into it. It might be worth thinking about.
For me it's a house that is over 100 years old, there probably weren't any real straight lines or untwisted bits of timer on it when it was build and so it just looks like a natural part of the houses character. Ok it is disappointing that the milled wood you bought has twisted and its perhaps not the perfect look you were after but we all know you will make the best of the bad situation as you always do and it will be hidden or obscured in the later interior finishing works. I'm sorry it didn't work out as you had hoped. Any construction project is full of the opportunity for swearing and jumping up & down in frustration. Just don't do it when on a ladder or a scaffold.

You made a great solution for the twisted beam.
A professional Carpenter sees immediately the beam isn't streaght.(Sorry).
I would compress the place where the two beams join with wide washers and screws.
