  • Using homegrown fresh jelly leaves to make pure jelly in the traditional grandma's way.
    It is very simple. Rub the leaves repeatedly with your hands, and then take out the juice. This leaf juice contains natural gelling gum. Add a little plant ash water and wait for about two hours, and it will naturally solidify into jelly.
    I remember that a visitor once asked me to provide him this pure jelly for a long term basis. He loved it so much that he wanted to use it to stop drinking other unhealthy drinks. I gave him the secret recipe and taught him how to make it himself, so he can enjoy handmade grass jelly (also called cincau) at anytime and anywhere!
    用自家栽種的新鮮涼粉葉子或稱為《觀音豆腐樹》,以傳統的阿嬤方式, 製作原汁原味的涼粉。
    這是之前園中最受訪客歡迎的自製純涼粉,屬於一種夏季解暑小吃。
    製作過程非常簡單,用手將樹葉反覆揉搓,然後取出汁液,這葉汁含有天然的凝固膠,加少許草木灰水,靜待大概兩小時,就會自然凝固成涼粉。
    記得曾經有一位訪客要求我長期提供他這個純涼粉,他實在太喜歡了,他想要用來戒酒! 我就給了他這個製作秘方,教他自己製作,任何時候都可以享用自製美味可口的飲料!
    Handmade grass jelly (Cincau )
    1: Pick fresh cincau plant leaves and remove the root and stem.
    2. Wash the leaves
    3. Wash and add 50g of leaves to 500ml of water
    4. Rub repeatedly to make the leaf juice completely blend into the water.
    5. Then filter out the leaf residue with gauze.
    6. Take 1 tablespoon (20-30g) of *ash and blend it into the water. Stir well,
    7. Filter the residue with gauze.
    8. Mix the ash juice into the leaf juice, stirring in one direction while pouring.
    9. Wait for 2 hours, and the grass jelly is ready.
    * burning durian shell in order to get the ash, which will act as a natural coagulant, in making the cincau. (you can also burn any organic edible plant, e.g. coconut shell, straw)
    自制天然凉粉
    1:將新鮮嫩綠的葉子採摘好,去除根莖部分。
    2. 清洗葉子
    3. 洗淨後連同50克葉子兌水500ml
    4. 反覆搓揉,讓葉子汁水完全融入水中。
    5. 然後用紗布過濾掉葉子殘渣。
    6. 取1大匙(20-30公克)*草木灰j融入水中。充分攪動,
    7. 用紗布過濾殘渣。
    8. 將灰汁融入葉子汁,一邊倒一邊朝一個方向攪拌。
    9. 靜止等候2小時,一盆涼粉就製成了。
    * 燃燒榴槤殼以獲得草木灰,充當天然凝固劑。 (你也可以燃燒任何有機可食用植物,例如椰殼、稻草等)
    Making Cincau Drink
    1. Bring a pot of water into boil. Add in pandan leaves.
    2. Add in molasses sugar.
    3. Turn off the stove and let it cool down.
    3. Pace a desired amount of cnncau stripes into the cooled pandan scyrup.
    製作凉粉飲料
    1.將一鍋水煮開。加入香蘭葉。
    2.加入糖蜜。糖溶解後,關掉爐子,讓其冷卻。
    3. 將適量的凉粉放入冷卻的香蘭糖漿中即可。
