    I eat salmon rice in this way-- mix Japanese soy sauce with sesame oil and I dip my raw salmon in the soya- eat it with warm rice! Sometimes I put red Korean pepper powder into soya!

    包丁使いを拝見していて、魚の捌きに関しては突っ込みところ満載ですが、「だし巻き」「茶碗蒸し」「なめろう」「ほうれん草のお浸し」青魚の捌き、できますか?
    それなりに修行された方なのでしょうが、これらを「和食」として誤解を招く事は、できれば、ご遠慮願いませんか?

      They lightly spray water and cover the filets in salt to get rid of naturally accurring Salmon oil which can make finished dish overly oily if you ommit that step. Salt gets rid of unpleasant oily-ness but won't make the fillets salty. They then wash the salt off and dry the filets. Then fillets are added in sweet and lightly salted sauce to marinate. Salmon filets absorb a bit of delicate salty, sweet sause before sliced and top the hot white rice.

    Was this salmon frozen to kill any living parasites, or do you not use fish if you see parasites in it ? Wonderful job of cutting this salmon, I’m wondering why are you salting the fish and adding flavoring to it then serving it raw with the rice? Is it not sushi quality ? My favorite is to eat salmon completely raw with nothing added.😋😋 I prefer sushi rolls made with just a few fillings, salmon,, avocado , green onion,rice 👍🏻👍🏻😋 The final presentation is very beautiful ,I wish I could taste some with a lit soy sauce 👍🏻👏🏼❤️😍😋😋😋
