    Any time you grill, your grilling times can change. The obvious goal is not to overcook it. You can always throw it back on the grill.
    I tried a new technique of searing for a little more than two minutes a side at around 600 degrees. After that, I closed the vent and capped the Big Green Egg. Then grill it on each side for just two and a half minutes.
    Note: The times for these steaks were for an inch and a half and two inch filets. The times need to be adjusted for smaller or bigger steaks. Make sure you have sear marks, and do not forget to let them rest for five to ten minutes.
