Ok. I’ve watched a lot of your videos. This one convinced me that you are a Texan. The black pepper gave you away. I already knew you loved it, ten times over. And then this. Keep up the great work.
Been making filet mignon for a long time, but you guys taught me something new with the onion sauce. That's some GOOD stuff; tried it last week and it was delicious.
Did it tonight. It was so good!! The sauce was perfect on the mash potatoes we had with the steak. Basically, it worked on everything we had on the plate!
Very good looking steak! The onion sauce is on the to do list for this weekend. It's finally going to be in the eighty's here in Middle Tennessee this week end and we can enjoy the outdoors a little more, Another great video.
I just discovered your channel. You are a great presenter, thank you!! Have you ever done a blooming onion before? My wife loves that and I would love to try to make one someday. Thanks again!!
Dude, this was some of the best sauce I've ever made for my filets. Wow, this was simply amazing. Thanks so much for sharing, I'm going to need to share this with some friends! 💯💯💯
Nicely done! Hello from Georgia! Another amazing video. As a backyard guy, I appreciate your video content and length. So many go on forever it seems. You keep it tight and full of info and great content. I watch plenty of bbq videos and I think you are amongst the best out there. Keep it up and keep 'em comin! Maybe something with a brisket or a big burger....😉
very nice video cant wait to try out that onion sauce, it looks delicious next week ill be doing some picanha and wont miss the chance! greetings from brazil, keep doing the great work (:
I've been coming back to this video for a couple years now and use it almost every time for my filets. It's amazing. But I have been searching for that spatula with the slots for a while and cannot find it anywhere. Where did you get that?
Not a pellet guy,,more traditional,,but must admit that was the best vid I seen so far using a pellet grill,,love ya videos and definitely gonna have to try this 1,,hope ya do a t bone steak 1 day I know it will turn out great so I can add it to MY recipe book lol,,great job and god bless
T-bone definitely will be in the near future. Would you rather see it with or without grill grates and any particular grill? Thanks for the great support!
There are several great pellet grills out there but the bang for your buck is going to be Grilla Grills.. hands down!! Cost and build quality are top notch and customer service in excellent! You will not regret it!
Honestly, most likely on a hot and fast cook it would be hard to taste the difference. Now if you slow the cook down you may could pick up the charcoal flavor. Also something think about is with a filet there isnt a lot of fat dripping on the coals to add flavor where as a ribeye would.
The Grill Temp probe is only ready air temp above the grate so it reads 480. The temp gun is reading surface temp of the grates and the aluminum grates absorb more of the heat. If that makes since. Grill Grates make all the difference in the world.
Swine Life BBQ thanks for the speedy reply. Filet mignon is on my menu for this week -perfect timing! I appreciate your videos. Keep’m coming...if u can.
Usually just on a warm plate with a little foil covering it is good enough. You can pre heat the plate with hot water from the faucet and it works great.
Just to make sure there was good contact on the grates. Helps with seating and even cook. You could flip as much as you like but may not get as good if marks. No right or wrong way.
I really don't know why folks pour rub all over the meat they're smoking. Salt, Pepper, and maybe a little garlic powder is perfect. But I'm not the foremost expert. I just want to taste the steak. Just my preference.
Do not...I repeat, do NOT press a quality steak like Filet onto the grate. Oh, feel free to mash a burger or pork chops, but not steak. The weight of the meat will settle it onto the grates without any help from you, plus, every time you press the steak you lose juices...you don't want to do that. Second, unless you prefer the flavor of choice cuts, get a better grade. Having to trim half the fat (hard or otherwise) inflates the cost of the remaining meat to the point where you'd have been better getting a better grade of meat with less waste (and more steak).
Ok. I’ve watched a lot of your videos. This one convinced me that you are a Texan. The black pepper gave you away. I already knew you loved it, ten times over. And then this. Keep up the great work.

Good video, killing the grillmarks! Keep em coming buddy!
Thanks!
Have you thought about using the flat side of the Grillgrates? I do it for hamburgers and steaks.
Oh yea! It works great. Haven’t tried it in steaks yet but definitely will give it a try. Works great on burgers. Check out our skirt burger video.
Tried this tonight, don’t put the garlic in until half way through or it will burn and get bitter but other than that, spot on🤤
Appreciate the feeback! Glad it turned out!

Thanks for the tips! Steak came out amazing using your guidance for my first run on a pellet grill.
The best steaks are the ones you don't have to add anything to after they're served. These here look good!
Can't wait to try that onion sauce. It looks delicious.
Thanks! Let us know how it turns out!!
Great suggestion with the onions.
Thanks!
Great video! What brand of pellets do you use?
Jared Alva Grilla or lumberjack are my two favorites. Pecan or and hardwood blend. Thanks!
Awesome recipe.
Thank you!
Man i was wanting a Pellet grill so bad, but my buddy said you can't sear stuff on it. I sent him your videos and laughed. Lol 😆 these are beautiful 😍
like the onion sauce idea!
I could eat those onions with just a loaf of bread. Great job
Trust me, we thought about it!! Thanks!!!
Moore's is fantastic!

Will Killer Hogs Steak Rub work here too? This looks awesome
Oh yea! Use whatever rub you like!
Love it, going to try it. Going to buy a larger pellet grill have a Traeger now, but to small. What pellet grills do you like best? From Kentucky
There are several great pellet grills out there but the bang for your buck is going to be Grilla Grills.. hands down!! Cost and build quality are top notch and customer service in excellent! You will not regret it!
if you cooked steak exactly the same way using Weber kettle and charcoal instead ..do you think you could tell the difference in taste?
Honestly, most likely on a hot and fast cook it would be hard to taste the difference. Now if you slow the cook down you may could pick up the charcoal flavor. Also something think about is with a filet there isnt a lot of fat dripping on the coals to add flavor where as a ribeye would.
@@SwineLifeBBQ ...agree with you thanks for your input
Question... if you set grill to 480, how are the grates going to be 600 degrees??

Solid my friend, solid!
Thanks!
How long before the onions sauce cook before mashable and what temp? Looks so good? 😋😋
Usually 45 minutes at 400 will do it! Thanks!
@@SwineLifeBBQThank you sir. 👌
Are those cast iron grates on your smoker? If so, how do you take care of them? Season, clean after use?
These are aluminum. I still try and keep them seasoned as much as possible.
MAN that looks good! Gotta ask, what's your go to on the grill meal on a game day?
Just depends on the cook. Big meats... I gotta say the outlaw stick burner or drum. Grilling... PK or Weber. Any sides or apps go on pellet. lol.
Do you need to have those grill grates?
When you sear your steaks on the grates, do you have your broiler plate on the pellet grill open to expose the flame or closed?
No flame exposed. Standard drip pan in pan. Just running it hot and letting the grill do the work.
@@SwineLifeBBQ Are those cast iron grates on top of your other ones? If so what kind and where do you get them?
What are gloves you use for food prep and where can we find them? Link?
They are just black latex gloves and I order them from howtobbqright.com
How long does it take to cook a filet? Seems quicker than other people with pellet grills
Usually 8-10 minutes for rare plus..
If I wand more of a char on the whole piece instead of grill marks, can I do that on the flat side of the grates?
Should be able to. Just as long as they are in the a little cooler than 600 degrees since you want be twisting them. Should work great!
Swine Life BBQ thanks for the speedy reply. Filet mignon is on my menu for this week -perfect timing! I appreciate your videos. Keep’m coming...if u can.

What is the the size (quarts) is the Dutch oven?
I believe it’s a 1 quart. I think. I will check
How do you keep your steak hot during this resting period?
Usually just on a warm plate with a little foil covering it is good enough. You can pre heat the plate with hot water from the faucet and it works great.
Where can I get grates like you have?
grillgrate.com
I am looking for sear grates for my 700e z grill. I hear that bbq is the same as mine. Does anyone know where I can get his sear grates
www.grillgrate.com
Am i the only person wanting to know where he got the lid topper for the cast iron?
Haha! I will find out where we got it and let you know.
Will this way of cooking the fliets also good on a cast iron
Oh yea! That would be great also.
Damn man, this looks so good!
Thanks!
What brand of Dutch oven
This was a Martha Stewart Collection believe it or not LOL.
What brand is the 2qt Dutch oven you used for the onions?
I will check. It was a gift. It’s a great little pot tho!
Southern living as well as Mary’s Stewart’s collection has them. They are enameled coated inside.
Lord have mercy that looks good.
HAHA! Thanks!
Where did you buy the grate that you have on your pellet grill Thanks.
Grillgrate. com
www.grillgrate.com/
What type of wood pellets did you use?
Usually pecan, hickory, or post oak. I try to stay with a Hardwood and not a fruit.
Hell yea. Im doing this!
Why would you press the steak instead of just flipping it?
Just to make sure there was good contact on the grates. Helps with seating and even cook. You could flip as much as you like but may not get as good if marks. No right or wrong way.
I’m in love with your kitchen?
Thanks! Lucky enough to have a dad very talented with cabinets!
Give em a guuuud twist
“We want the grill grates to be 600 degrees. Sets it to 485.” Im confusedp
