만나 has two 아. The ending vowel is important you said. So it's the 아 in 나, but once you coloured the 아 in 만! That confused me at first, other than that very clear. So what about 돕다? Its last vowel is 오, but it doesn't end with 오, but with 비읍 instead. So do you use 았 or 었? I'd say it's 었 since there would be no shortened form with 았, which is probably the reason for 았 in the first place (unless 돕았어요 would become 도바써요, but that isn't even shorter so that doesn't make any sense). 돕었어요
Well, in my opinion, generally many verbs follow this rule, but you know, speaking of languages, there are many exceptions even in English too. Some just need to be memorized...Just consider it as a general rule and please be aware of other exceptions. And yes, 도왔다 is past tense for 돕다.
