- We challenged chefs of three different skill levels - amateur Emily, home cook Daniel, and professional chef Saul Montiel from Cantina Rooftop - to prepare us their take on tostadas. Once each level of chef had presented their creation, we asked expert food scientist Rose to explain the choices they made along the way - both good and bad. Which of their crunchy creations looks most mouthwatering to you?

Emily's secret ingredient: Ketchup
Lorenzo's secret ingredient: Bacon
Frank's secret ingredient: Salt
Saul's secret ingredient: Lime
Can’t disagree with any of these! They’re all delicious and helpful! My secret is lemon or balsamic or cheese.
Although Lorenzo also loves his butter... You forgot Penny secret ingredient: any alcoholic beverage xD

I enjoy Emily so much, she is not pretentious at all and really sharp and honest with what she uses/how she cooks while owning it all the way!

I feel like Saul is the kinda guy that if you knew him, and asked him to teach you how to make something, he'd be extremely excited to show you and try your attempt at it.

I think being in his own kitchen rather than a test kitchen or a sound stage like he normally is in these videos just ups his confidence to insane heights. And I am totally hear for it.

He was so much more at ease in this video. I don't know if he's just gotten used to being in front of the camera, or he was "at home", but this Saul is best Saul. I loved him in this video.

Level 1: it is perfect because it shows what a real home cooked meal should be like
Level 2: is perfect because it shows how a little bit of knowledge can improve your meal by miles
Level 3: because it is supposed to be culinary perfection and it is perfection
Let’s be real, we should only ever have Saul as the lvl 3 chef for all future Latin food episodes

@@ashimabandekar4237 Not this one. I'm Mexican, born and raised... Saul's tostada's is the only real Mexican tostada... And tostadas de aguachile are delicious. Come to Mexico. Some place in the pacific, you will find that kind of tostada.

@@andrewthezeppo that's exactly my point - even without the shredded chicken, at least level 1's somewhat resembles something I'd get if I ordered at a cenaduría, which isn't true for level 2. When I think of tostadas, I think of a fried tortilla topped with refried beans (not whole), shredded beef or chicken, shredded lettuce or finely shredded cabbage, sliced radishes, pickled onions, crema, cotija cheese, blended salsa, and avocado slices. It's so easy to not screw this up, and yet level 2 managed to do that. His flavor pairings and food textures work more as a chicken salad if anything.

Hey hey hey, whoa whoa whoa! Spanish people know the difference between Mexican and Spanish food! I'm not sure what this guy's background is, but my grandma was Spanish and learned to make Mexican tortillas from friends. I grew up knowing which was which, but we ate it all. Maybe he's Spanish, maybe he's not. Maybe his mom just liked to cook. :)

@@mr.random4292 Yeah its not the worst. but its not what you would expect of a level two grilled cheese. a level two is basically supposed to be the best iteration of the food just short of actual professionally trained cooking. my point is that his cooking is not enough to warrant him being in lvl two since this example, the fruit in grilled cheese and other episodes have shown us hes not on the same caliber as some of the other lvl two chefs like lorenzo, beth, julia or gabrielle. hes more experienced than emily but his skills and overall knowledge is not of a level 2.
I had covid back in May and my mom made Saul's version but hella spicy, like so spicy that i can only feel the heat. I lost my taste and smell. So i ate a lot and was so worth it

It was nice of Frank to give Daniel some flakes from his backyard salt mine.
Usually I am very interested in what everyone is doing, this time I was only interested in Saul. Just seeing all the different things he did was so cool. Cooking shrimp in acid alone is exciting.
We use this technique for different things in Mexico! I was amazed by how thinly he sliced his Chile Serrano
It's just ceviche, but it is pretty exciting :)

@@oaklandcookie Ceviche and aguachile are different. They are both cooked in acid and can be placed in a tostada, but they are not the same. Aguachile MUST be with serrano (unlike ceviche) no tomatoes mixed directly with he shrimp (unlike ceviche), etc, etc.

trust me it could be way worse, theres a youtube channel called kaye's cooking. she is probably the worst chef you will ever see and the way she cuts is genuinely stressful the entire time. i dunno how many videos she has cut herself in but theres a few, but whenever she cooks something is just terrible, and no its not fake its real. she seems like the sweetest woman, but the way she cooks is just cursed.

Why do we put lettuce or cabbage as a topping on everything? I have a gas issue. My mom would give me "sal de uvas" but it's nasty so I eat, stew celery, and just recently I got celery seeds.

What Saul did to the shrimp is a cooking technique we call kinilaw in the Philippines, usually with cubed fish and vinegar or citrus fruits. There's also the kilawin, where goat meat, beef, pork, chicken, and carabao meat are prepared in a similar way. Unlike kinilaw, kilawin are cooked (boiled, grilled or both).

I'm Mexican, and basically, Emily did a great job! For me, tostadas de tinga or cochinita need refried beans.
They are even better when you fry them again in olive oil. Get them nice and crispy 🤤

I really like the more sequential editing in this video, where it focuses more on each chef's process, rather than the parallel edits that compare and contrast the processes. I feel like I can keep track of what they are doing a lot easier.
