    For the last 10 years I have removed 1/2 of the juice from the cherries top off with High proof vodka, leave in the fridge for 4 to 6 mouths.
    Drean then freeze cherries, melt chocolate and dip them in, 250+ times. take to work the last work day be for Christmas.

    I made this 3wks. ago. it reminded me so much of Lawrence Cherry Vodka I drank in my younger years. I couldn't drink it. too sweet. I gave it all away today.

    I do something like this all the time. I take anything between 60-70% and infuse with just the cherries for a week. Then I proof down to 45- 50% with the cherry juice. I pre calculate how much neutral sprit I need depending on how much juice I got from the jar to get my desired finished proof. I like to plan on ending at a higher proof so I have the option to add water if it’s too sweet

    And also does it matter where you put your reflux at on the column.. like does it have to be at the top or if you had a break in your column could you put it in the middle

      That is a great question I think needs to at top just below the out to condenser I have tried near middle and doesn't work as good

      Hi B_ran, what I have read and told is it's a safety thing plus you need the volume to cover up heating element cheers

      Because a higher abv could combust off the heating element? I have heard other youtubers say 40 or below for safety but like let's say you have a 10 gal. Pot and you have 8 gal of mash so your well above the elements and all that ... like say you stripped and your at like 8 gal of 60 percent
