  • Join Amy for a review of the Bosch Universal Plus Stand Mixer MUM6N10UC. This is the update version of the Bosch Universal Mixer that is 6.5 quarts and 800 watts. We also have the optional bowl scraper, cookie paddles with metal hub, and the stainless steel bowl. We tested this mixer by using the whips to make whipped cream, the cookie paddles to make Peanut Butter Cookies, and the Dough Hook to make bread dough.

    I make small and huge batches of bread and cookies in the Bosch. I have made 100+ loaves of whole wheat and white bread and dozens of challah bread....Never a problem. There is a hub scraper attachment for under $10 that makes a huge difference when mixing small batches of dough. I have and have used the KA for years and like it, but especially for bread, the Bosch is 1000x better. There are tons of videos on youtube that demonstrate the proper way to use the Bosch, Watch them and follow the process and you will never turn back to a KA.

      Thanks for posting this, Jack! I'm researching stand mixers and was sure I wanted a KitchenAid until I started watching Amy's videos. I'm looking for something to help me with bread more than cookies. Cookies would only be around Christmas, whereas bread would be year-round. Still, my husband has an annual tradition of making Christmas cookies and if I asked him to drop this kind of money on a stand mixer, it better be able to do everything! And I was sure I wanted the Bosch until I saw how it handled cookie dough in this video. Thanks for pointing out the scraper attachment. I was impressed at all the attachments available after visiting the Bosch website. I'm not giving up on it, yet!

      I agree that the K.A is .... Not a good match for regularly mixing bread or cookies. I make bread a few times a week and cookies once a week. My K.A motor is falling me after just a year of This

    Just saw this review, and it addressed every problem that I was having. I am pleased with the machine. I usually make large batches of bread and it does the job. However I did a smaller batch of whipped cream recently and it would not whip stiff. Still holding on to my Kitchen Aid just in case.

    I have a KitchenAid 5 quart that is probably 18 years old and really could not make large batches of bread or cookies I bought the Bosch universal mixer about five years ago and have been super happy with it, my KitchenAid collects dust the only time I use it is to use the attachments that I originally bought with it. In the Bosch I have made six loaves at a time of bread and it did a phenomenal job

    Thanks finally for the review however I respectfully have to disagree with some of what you described. I purchased the Universal Plus online from a website here in Canada. I paid aboutd $540 CAD (which is about $400 USD) and this included the cookie paddles, cake paddles, wire whips, plastic drive, metal drive, small dough hook extender, blade scraper, and large dough hook. I thought it was a great deal. I did initially have an issue with a part on the blade scraper breaking off however it was because I did not apply a wee bit of oil to the blade. The company sent me a replacement at no charge. Watching your video it looked to me like you did not have the blade scraper fully attached properly as it seemed to be flopping around too much. I have made several single batches of cookie dough, muffins, and merengue ....all successfully and mixed well. I agree, there is a learning curve. I have also made several 2 loaf batches of bread using the small dough hook extender and again, have had no problems with kneading dough. The secret is to add the flour slowly, watching until the dough starts to pull away from the sides....do NOT add ALL the flour at once. You may not need as much flour as is called for in the recipe!!! I have had the tilt head Kitchen Aid as well as the Lift bowl model and I much prefer the Bosch over the Kitchen Aid. It has more power and to me, mixes better.

      For some reason, the version that we have in the US doesn't have the scraper or cookie paddles included. Those are separate purchases. I ran the cookie test twice on the video and using the scraper was much better. It wasn't really flopping around at all. My advice is that the mixer is made for larger batches. If you only make single recipes, you will probably have to have the scraper. Eric added the flour in by the cup full and the dough was properly hydrated when we got it on the board. It actually made some really nice bread. But...I've used the dough hook extender and it was only ok. To me..this mixer isn't that great for a single loaf recipe. It is a workhorse for larger batches.

      The scraper and cookie paddles are not normally included here either...it was a special that was offered where I got everything included for the price I paid.

      I make small batches of bread dough - just enough for 2 small loaves. For me, it worked great with the dough hook extender. I wouldn't want to make just 1 loaf of bread. Too much work regardless of which mixer is being used :-)

      Most of my single batches are pizza dough. I ran a test on a single recipe of my Honey White Bread using the dough extender and the plastic bowl, the mixer just spins the dough around as a single ball even with the extender. I tried to hydrate the dough a little more so it was more sticky which helped a little. I then ran the same test using the stainless bowl and I definitely got a better result. I am not sure if the stainless bowl has a slightly rougher finish on it than the plastic bowl so it grips a little better instead of just sliding..I am not quite sure. I am not quite finished testing these mixers so we will see if it is the case. I am thinking that my next Bosch video is going to be the plastic vs. stainless bowl.
      I do believe that with multiple loaves of bread, the Bosch runs circles around any KA. This is why I believe that for a home cook who wants to increase their flexilbility, two mixers is probably the way to go....Those two in my book being a KA for small batches, cakes, etc and either an ANK or a Bosch for holiday cooking, bigger batches, bread making, and for large families. But...after all the mixers that I have tested, I can't say that there is one that stands out as a shining star. They all have some limitation. So...until I find my ultimate stand mixer, I am having fun testing all the mixers that come my way.

    As usual your review nailed it! As for the machine, it feels like your original Bosch did a better job with all your tests. I will just add some suction cups to that mixer, and send this one back. I was totally disappointed with the creamy part and with the dough kneading part.

    An enlightening review. After your first video with the other bosch, I was strongly considering making my primary home mixer a universal. Now, after seeing this, I'm glad I haven't gone in that direction.
    As much as I insist that my mixer be capable of breads and other stiff doughs, I use it more for cookies and other paddle/whips type situations. In 2017, I've actually used my mixer to shred more chicken breasts than dough prep! The Bosch wouldn't be a good fit for my home. Thanks for helping me see that. If only the "Ank" were a few hundred dollars cheaper . . .

      Thanks for watching. We appreciate it. Yeah, the Bosch is good as a heavy duty mixer for bigger jobs or for LOTS of use. If you plan on using your mixer A LOT then you could use it. But since you're not running a bakery, you can use most other mixers to mix cookies and other lightweight things. If you're going to do occasional breads, then any KitchenAid would work, or the Kenwood, or the Cuisinart, or the Breville, etc. KAs are usually on sale at Macy's. We love the KA Classic Plus for its size for doing the lightweight things you talk about doing, and if you can get it for $199 on sale, then you don't have to deal with some of the unknown brands out there. The Hamilton Beach is a cheap mixer, but small bowl is 3.5 quarts I believe. We got one on sale once for $50, so that was a steal. I think Amy got another mixer that we haven't introduced you to, also for $199, but Macy's likely errored in their pricing.

      For the price and isn't worth it, I have my mom's K5SS Kitchenaid that she bought in 1984, I don't really remember her having to scrap the sides as much as Amy had to do with this machine.

    Amy, I agree with everything you said!! Our mixers are our trophies and for the price the hub should be stainless, NO powder, along with stainless bowl Standard! I do think it's a good powerhouse overall, But my Ank sits on my counter.

      I'm not sure why so many people seem to like the Bosch. Maybe they are used to it or something. I'll try some more doughs using the stainless steel bowl to see it if does any differently. Amy loves her Ank and her KitchenAid(s) that's for sure. LOL!!!!

      Thanks Jenna. We appreciate you watching and your comments. There wasn't much of a division in the house. As you saw, I wanted her to use the scraper beaters because there is no way Bosch owners can tolerate such bad beating when it's only a single recipe, right? I mean, if you are cooking for a large family, then you have no care for such small doughs and batter. The Bosch defenders tell us we're doing it wrong, but the recipes don't tell you to do anything different than you'd do in a normal mixer. Soooo, I was a bit disappointed with the bread kneading. But then, it's the included plastic bowl. We'll see if the optional stainless steel bowl does a better job. That's what the people in Europe are used to using with this, not the slippery plastic bowl. The bread was wonderful, and you'd have bite marks if you showed up. LOL!!!! Thanks for watching.

    Wow,I was so excited when I saw this mixer,I love to make cakes, I own two kitchen aid mixer,after I watch your video I am so disappointed and happy in the same time, I’ll never spent money on this mixer is so crazy,to many attachments to wash,plus I saw how difficult is put in and off from the machine , plus the quality of the scraper and paddles.

    So glad I watched this video because now I know this is a mixer for those who make large batches of bread, cookies, etc.
    My KitchenAid mixer is perfect for my needs. I'm lucky, I bought mine about 16 years ago when manufacturers cared more about quality than quantity and using cheap materials for products that are not going to last very long. I've never had a problem with it or had to order replacement parts.
    I'd be afraid these days to spend that kind of money on a product that's made mostly of plastic when you just know parts are going to break. But that's the problem with most anything manufactured today. They're not made to last.

      Thank you PJ, I agree with what you say about the lack of quality these days. Did you see Amy's 14 pound dough ball she made in this thing? We put that up about a month or so ago. This thing does better with larger quantities than smaller ones, despite what people say (which is funny). It 'can' make smaller number of loaves, but doesn't do it very willingly. I think the stainless steel bowl works better than the plastic bowl (just slips and doesn't knead very well). Glad your KA is hanging on and doing what you need it to do. Amy's Pro 5 quart from the late 1990's is among her favorites, so I know what you mean.

    They have a bowl scraper attachment that scrapes the inside and outside of he bowl. Bosch does recommend using the whisk attachment for creaming the butter and sugar before putting on the cookie paddles. Also, because the Bosch has two paddles, for large batches of bread dough, the dough won’t “ball” up the way we’re used to. The rule of thumb is, once the dough pulls away from the sides, that’s when you start your knead timer. I have two Kitchen Aids but, I’m considering a Bosch for large quantity bread dough using freshly milled wheat. I’m still in the research phase but, I’m finding that the Bosch is more powerful when it comes to kneading bread dough. I appreciate your thoughts on the attachments not being stainless steel and cord management. For the price point, I think all the attachments should be stainless steel. Another thing that’s giving me pause is the paint on the front rubbing off over time…ugh! For almost $500, you would think the logo and dial markings would be etched or raised. In the end, I think I’ll still invest just to be able to do multiple batches of bread dough at once but, my 8 quart Kitchen Aid is my go to for cookies and the 6 quart I’ve had so over 30 years is right next to it’s big brother for those small jobs. God, I have a lot of appliances…lol

    Hi Amy, thank you for the demonstration but I need to say a few thing as a long time owner of Bosch Mixers.
    This is a heavy duty mixer, it does a good job if you let it do its thing but It has a learningcurve, more so for you (most Americans) (I am from Sweden) because you are used to the Kitchenaid type of machines. For us here standard is the stainless bowl and plastic is an optional extra but here we can not get the cookiepadels or the whips, it comes as standard with the wisks. This is more stable than the older types due to that the bowl locks on to the base, I did not se you show that or maybe you do not know this. To take out dough hook or paddles or whisk you just twist it a little and then up, as you also needs to do with an kitchenaid.
    I recommend to what the channel Bread Beckers to se how to make bread in this machine due to that it need to not be as stiff as I se you make bread. Also would like to say that not put in all the flour like you do due to it acually varies from day to day due to humidity, temp.
    It is a machine for those that make for then 1 batch of stuff due to its size, if you want something smaller get a kitchenaid or the smaller bosch mixers, those are very good to.
    I do after this demonstration wanna get the bowl scraper, I can se it makes a big differense, I also scrape the center post of the bowl when doing cookies as the sides.
    This machine along with the "ANK" as you call the Ankarsrum, ( I grew up with that but it was called Electrolux back then) has a learningcurve, shorter with the Bosch I think.

      Thank you Bjorn for watching and your response. I did notice (but failed to mention) the bowl locking in this model. Yes, the previous model lacked it and the bowl could come loose. Amy was just thrilled for the suction cups as you saw. Amy wanted to point out that the Bosch is not good at doing small jobs, even though the manual doesn't warn you. But then, you wouldn't expect a KitchenAid Pro 6 to beat 2 eggs. You would get a smaller mixer for that. As you saw, the plastic bowl is standard, and the "good" stainless steel bowl is expensive. There is a cheaper stainless steel bowl that is lightweight and subject to damage. I was not aware of the learning curve for the Bosch as the provided bread recipes in the manual don't tell us to make bread any different than we would do with other mixers. That's part of my gripe. The average person is used to Kitchenaid mixers and other mixers that simply spin the beaters. If this is designed to have ingredients added differently, then we need to know that. We know the Ank is designed quite differently and has its own learning curve. I'm glad you learned something (the Star Trek looking bowl scrapers). I thought those were odd that they are added onto the cookie paddles, instead of replacing a whole paddle, thus more complex. I think it's odd that Bosch does not include the cookie paddles with the mixer. Most mixers give you a whisk, paddle and dough hook. Here, you just get the whisk and dough hook. KitchenAid will include an option scraper paddle for free in their more expensive Designer series mixers. You are correct that we often make stiff bread, such as designed for bread machines. We actually made (and filmed) a small batch that failed to knead in the plastic bowl. She did a different recipe in the stainless steel bowl that turned out pretty good. I wanted to do this recipe (2.8 KG) dough because the 8 quart KA Commercial did it quite well. I hope you can appreciate that the one thing we didn't want to do is to use this machine in a way that shows it doesn't work as good as other mixers by doing the same tests. There are tons of Bosch fans that love it for making bread. There is no way we would make this recipe in any of her KA mixers (smaller than the commercial 8 quart).

      We originally bought a Bosch when we bought a grain mill. We'd like to do a few videos on that. Something else that we'd never think to ask our KA to do is mill grain. Once again, thank you for your thoughtful response.

      Thanks for your answer! We agree no smaller batches. Mine are from 2 to 8 cups of liquid thats how I base my bread recipes.
      This is an European machine and we do things a little bit different than you in the US. When I did not have this machine or growing up with the "ANK" I never made cookies in a Standmixer, we either used a handmixer or a foodprocessor with the blade.
      I do not think that the older kind of steal bowl is any less quality, It is bigger in size and has the dough hook in the bottom and it can not make anyhing else than dough. That bowl were sold as standard more or less here, there were machines with the plastic bowl but most had the stainless. I accually think that the older style stainless bowl i better then the newer one due to I think i kneeds a little better and I can make more in it.
      Grain mills are not common her at all, there were to types made for the bosch, non sold any more here.
      One with steal milling and one that you put ontop of the older type of bowl and it had millstones of real stone like in a windmill.

      I actually think the plastic will wear differently through the years. My dinosaur 300watt tilt classic KA is part of the family, and the bowl although impeccably cared for shows scratches and signs of age, whereas the white Bosch bowl will likely weather much better -much like my dinosaur pro Cuisinart food processor. The white plastic housing looks brand spanking new and glossy, while other SS products are looking aged and tired. All that wind to say - I like the plastic!

    Other reviews I have seen indicate that cookie doughs do better with a double batch. I have seen it Cream extremely well with two or three batches.

    I've had my Bosch Universal Classic for about 25 years. It still works great. I would like to have the newer model because of the bowl and dough hook scrapers. I get by with the wire whisks and dough hook without problems. It seems like the whisks should be used for a small batch of cookies to cream the butter and sugar. I haven't made big batches of bread dough using my mixer.

    I guess I'm misfit kid, cause I store most of my kitchen trophies under the counter in the cabinet lol. I have a small kitchen, so the real estate is the most important thing to me in my workspace. The only items I leave out on my countertops are the items I use on a daily basis. Which is my Nespresso Espresso Maker, my old-school Farberware coffee percolator, Zojirushi Neuro Fuzzy Rice Cooker and my Breville smart oven air convection oven. To each, it's own, right lol? That being said another great product review. Since I'm not a baker, I don't really need a shiny chrome 57 Chevy stand mixer that weights a ton. What I need is reliable multitasking to save time and space. I'm leaning towards the Bosch MUM6N10UC Universal Plus Stand Mixer, 800 watt, 6.5-Quarts with Large Slicer Shredder attachment, but still not entirely sure. Any suggestions Eric or Amy that you may have is appreciated. Happy 2018 btw :D

    As far as the cookie mixture there is a problem with incorporation, the fat seems to adhere to the center column and the lower sides and as you pointed out there left a lot to be desired with the creaming process. Once the flour was added it seemed to come together somewhat. I still choose my KitchenAid over that anytime, and another issue is the endless collection of parts to wash, with my KitchenAid, I have only a beater and a bowl to deal with afterward as far as the mixing equipment goes.

    Amy, the motor is under that blender attachment.
    The drive is under the bowl. Just like the UM3.
    I have actually pulled the bottom off of a UM3,
    just to see the guts. Er, transmission. It is more
    beefy than stew! Good beef stew. (Transmission,
    like a dragster.)

    I researched and they say dough hook is stainless steel, but I would check the guide for cleaning of the accessories. Burnishing or burnish generally refers to the finish of the metal, nut the type of metal.
    Some metals do have a natural burnish while others get that with how they are made, such as cast iron and cast aluminum. Other methods of manufacture may leave it shiny, and they use something like sand paper or beads and micro beads with air pressure to create the burnish.

      If you wash it in the dishwasher, it will oxidize and give off gray powder. I would only hand wash it and dry it immediately.

      That is a comment on Amazon and they say it is due to what is in the detergent in the dish washer. I think it is best to hand wash it.

    is the boush build for these tax ?

      From my past experience with Maytag, it will turn on, but suds up everywhere and rip your clothes while the repair man tells you to use cold water, hot water, HE soap, non-HE soap, etc. and come back 5 times to not do anything to fix it. I'm guessing you've seen a Maytag that actually worked? LOL!!! I didn't think the Bosch was ugly, just that didn't knead bread in that plastic bowl as well as the KA commercial 8 did (when we did that same recipe awhile ago).

    I have the two previous Bosch mixers and I have never had your level of difficulty in adding the different pieces. a gentle rotation releases the attachments. I notice every time you try to just yank it up with out feeling for the release. You shouldn't want it to be less or the they would fly off during mixing. I do all size batches in both of the older ones. I like the idea of the scraper and may add it. Overall, those buying a bosch are not buying it for asthetics but for functionality in heavy doughs and larger batches. Let's remember to compare apples to apples. If all you want is a batch of a dozen cookies use a hand mixer. The Kitchen Aid does not touch the Bosch for what it was created to do.

    What is the real maximum amount of dough that you can knean without killing the gear ?
    Iv seen 2-3 kg of flour but salesman told me not more than 1.5 kg of flour
    Beyond 1.5 kg of flour the gear will wreck

    I think with the creaming of the butter and sugar in the Bosch it would cream better with the whip attachment provided the butter is soft. I don’t think you’d have that problem with it gathering around the center post. 😊

      yup, mixer is very powerful we never had a problem with it, maybe because we are prosumers with small catering business. We also have a small tilt headed Bosch with a very unique planetary mixing system. They are all very powerful. for General home cook Kenwood/kitchenaid would be well enough

      Noreen's Kitchen is definitely for those who like to do large batches, perhaps even catering. The demands they made on their KitchenAid proves that their are limitations on a consumer-grade product. I would have enjoyed their videos more, had they opted for a commercial-grade machine such as Volrath, or Globe. Many people would love a machine like the Globe SP8 or SP10, for example, but there are no consumer videos that show what these machines can really do. I strongly feel that the market is ready for a Hobart C100 come back, but have this sinking feeling that it will never happen. I guess the goal is to find a product that will do the job, that costs the least to purchase. And so, they have the Bosch which they are perfectly happy with.

    For very large batches it might be good. But the kitchen aid is good for smaller things. Bosh has a tilt head mini mixer bosh 400. I saw on a video some one using one. Not sure how good the mini bosh 400 is tho.

    Amy, my older brother SWEARS on his KA!
    Until it broke, just like ATK's did on a test.
    I "loaned" him my Bosch Universal (UM3) with
    all my attachments. He is NOT going to give
    it back! He is going to keep the KA, for low
    force (whipping egg whites) type job. He is an
    AVID bread maker, about the only thing he can
    do, thanks to this corona virus ****! His breads
    are simply astonishing!
    (Oh, our mother tried to destroy a Bosch Universal.
    I am the second, he is the first, of 7 kids. 20 years
    later, the Bosch was just fine! 2 batches (5 loaves)
    of bread a week, cinnamon rolls once a week, and
    that BEAST never batted an eyelash. However, even
    with the smaller white plastic bowl, it couldn't whip
    1/4 cup of cream, or beat an egg white. It could do
    a quart of cream, or 20 egg whites, though.
    Yes, I do have a spare, and 4 other brothers also use
    Bosch mixers. (Did I mention the 7 children?)

    All of your demonstrations are EXACTLY the problem I have with the Bosch. Chocolate chip cookie dough does not fully mix! The butter smashes against that central column and the paddles can’t reach it. The scraper looks like a game changer.
    And when we mix bread dough, the dough becomes a merry-go-round. I am buying a stainless bowl to see if that helps.
    And I know there are a ton of people who will say “well, if you add this attachment” or “if you add the flour slowly, THEN it will work.” I don’t want a million *expensive* attachments or techniques to make the mixer… well… mix!
    With all that said, it is a workhorse and the fact that so many people love this so much more than KitchenAid (which I grew up with) is keeping me with my Bosch for now. But, we’ll see. Not convinced yet. But I think you review was fair, thorough, and spot on!

    once you get the metal hub can you just use it all the time? seems odd they wouldn't just have the metal hub with the unit instead of the plastic. even if it cost $10 more

      Yeah...you can use the metal hub for the whips, cookie, and cake paddles. I believe the metal hub comes with the cookie paddles because heavy cookie dough would break the plastic one. I don't think the whip needs one...I am not sure tho. It might be that Bosch packs them with the plastic and the US distributor is making the metal one. I think they make the cookie and cake paddles for the US market.

    Having only just watched your Ank review earlier this evening I think the Ank outperformed the Bosch in both the whisking of the whipped cream and with the cookie dough hooks. Thats a damn shame as I had higher expectations. This is one the mixers on my short list, but it doesn't seem to be available in the UK. The scraper blades did seem to improve the quality of the mix, but you are right they look a total faff to get on and off and its yet another expense on top of the base machine.
    Woohoo I got bonus points. I noticed the swap out.
    I've saw that same spin around then grab motion you mention on other reviews.
    Overall I think the Ank did a better job across all the tests, which has definitely disappointed me as my mind had both the Bosch and the Ank as comparable performance wise. Bread-making (well pizza dough) then rolls is the main reason I am looking for a new mixer so its still 'in the mix' so to speak, but the Ank has now absolutely nudges ahead on my list.
    PS: Amy I love you excitement in your little laughs that just explode out.

    I love the look of that mixer Amy, I have never owned anything but my kitchenaid but that there looks great. It's got some good speed, and mixes ok but the fact that you have to use a spatula to scrape down the sides would drive me bananas. Haha! I love these videos you make because you give an honest opinion and show us step by step each process that you take. Thanks for a great video, it's sure makes it easy to make the decision to either buy the unit or not based on watching it in action.

      Thanks Angie. Well, Amy pretty much explained up front that she loves her "trophy" mixer in the background. LOL! Not biased? But she wanted to show that the Bosch is limited in it's ability to do small jobs, thus you cannot be a One Mixer household with this thing. But then, would you use a KA Pro 6 to mix 2 eggs? Probably not. But we will make some bread to see how it handles them. I think the plastic bowl is too slick to knead bread properly, thus taking way too long. So we'll test the stainless steel bowl vs the plastic one (since the manual doesn't warn you about it). Glad you liked the video and thanks for your comment.

      I can use my KitchenAid Commercial 8 to do as little as two egg whites, and routinely use it to beat two eggs, some milk, and some vanilla for french toast. So even the largest KitchenAid aces the Bosch for small batches.

      Well, I mentioned that to Amy. The Bosch bowl is flat. KA's curve, so the KA's are a bit deeper than the Bosch for any given amount of ingredients. I just wouldn't expect the performance of such a large bowl. We like the KA Classic Plus because it's only 4.5 quarts and can do anything and then use your big boy for the big or tough jobs. Would hate to kill the Classic Plus making bread too often. But unless you get a good "bundle" deal, the accessories are way too expensive for the Bosch. We paid $400ish for the mixer and came with the plastic bowl, whip and dough hook. It came with dough extender. The older model didn't come with them, hence my heckling on the first video using the older model. I went out of my way and bought extenders for this one, although I didn't need them, but if they break.....

      The reason I use my KitchenAid 8 quart for small, as well as medium quantities, is that I don't have quite the space for a tilt-head in addition to my Commercial 8. I do have my Sunbeam, which is smaller, but my KitchenAid still out performs the Sunbeam in every way. And that's why I have a Sunbeam Heritage with a motorized turntable that still looks brand new, staying in the box it came with most of the time.
      For my Commercial 8: KitchenAid makes 5 quart bowls, and their 3.5 quart bowl and combination whisk/beater will fit perfectly as well. So I have one mixer that will do the tiny quantities of a tilt-head, just by using that combination whip/beater and bowl. I still use the 8 quart bowl for almost every thing, including the small amounts. It's the best mixing bowl I have, because I know I can toss a salad without losing a single tomato chunk or piece of bacon. I can toss olive oil into potato pieces vigorously for roasted rosemary wedges. I can rise a good week's worth of pizza dough, knowing it's not going to rise its self over the bowl's edges. And finally, I can whip up a batch of glaze for cinnamon rolls, without the bother of dust from the powdered sugar. So indeed, a bigger bowl is very useful, and stores right on the mixer for a quick grab. Plus, the mixer adds to that utility. My KitchenAid Commercial 8 is my favorite go-to counter-top appliance. The only thing it won't do is blend. :D

    There is a replacement dough hook for the Bosch Universal that is all one piece and stainless steel which costs in the area of $85-$110 depending on where and when you buy it online. There is also another (plastic) accessory that can be used with the stainless steel dough hook which DOES have its own stainless steel extender, but the plastic accessory extends it a little further and it really helps. I think the reason the manufacturers are putting out the machines with the aluminum alloy dough hooks is because it keeps down the price of the mixers by a good $75 at this point and they know everyone is looking for a deal and MOST people don't worry about such things. But I'm not one of those people. I have a Nutrimill Artiste and SOME accessories are interchangeable with the Bosch Universal. Happily, one of those things is the stainless steel dough hook, which I got with a small discount for $90. It works well, but I know I will like it better when I also get the plastic extender for the stainless steel dough hook. (P.S. The replacement dough hook for the one that comes with the Artiste mixer and looks just like the Bosch dough hook is about $25.) I prefer the Artiste to the Bosch for one reason: it is smaller (and I do not have a need for a larger one nor the room). Also, from what I hear the stainless steel dough hook works well for cookies, but 99% of the time I am just kneading home-milled whole grain dough.

    I dont know if its available in usa ( im from london ) but a few years ago the morphy richards mixstar came out. Ive had mine a while now. Its almost identical to the bosch universal but in a more modern chic dark grey motor case with stainless steel bowl & speed dial with useful digital timer on front to time your mixing. Its the most strongest rugged mixer ive used so far & the scrapers help a lot. I shall try the ankarsam i think the ankarsam will make a great companion to the mixstar

    My wife and I bought this Mixer in 2015. We experienced a lot of the same problems that were shown here. Towards the end the only time it came out was when I made bread. In my experience it’s too big for a two person family. Last month we ended up selling it to someone and bought a Hobart KitchenAid.

    Have you reviewed the compact Bosch stand mixer? Current price is $188.00. I own an Ank, an Artisan and the Bosch compact. My 400 watt compact Bosch does two loaves of bread no sweat, but the Artisan's motor will struggle. You can also get a 425 watt compact Bosch. This price range is good for those who don't want the cheapest and don't want to splurge on
    an Artisan. The compact comes with a plastic bowl but they sell separately a stainless steel one.

      Don't you have Kenwood chef's in the US? They were the mixer of choice in the UK for decades, many have lasted so long they have been passed to children then grandchildren. They are practically indestructible, and spares are widely and cheaply available even for the oldest models. The gears are all metal and the latest models are 1500 watts. Unfortunately everyone fell for KA retro looks over the last ten to fifteen years when they started appearing on cookery shows. They are significantly more expensive than Kenwood mixers but last months rather than decades!

    Amy, I've seen the stainless steel bowl without the center post. It comes with it's own mixer blade and the blade sits at the bottom of the inside of the bowl. No plastic components inside the bowl.

    A very helpful in depth review. I was seriously considering this Bosch mixer. However, I mostly bake with sourdoughs so any metal other than stainless steel would not be suitable for me. Thank you so much for pointing out that the dough hook is burnished metal and not stainless steel.

    Thanks for the nice demo! You're right to be a little cautious when whipping cream. Heavy cream, if you can find it, sets up a little faster than the whipping cream you used. Have you invested in the new batter beaters yet?
    One the fence between this and the Ank for a gift. Decisions decisions . . .
    ETA: your dough's too dry. Once your dough starts cleaning the sides of the bowl, stop adding flour. And consider the mighty Bosch Compact for smaller amounts, including bread.

      I have the cookie paddles but not the cake. I need to get them. I've always wondered what the difference is between whipping cream and heavy cream. Some stores have both and I just pretty much randomly grab one or the other.

      Try the "heavy"; I think you'll like it although it's noticeably thicker and richer than whipping cream. You need to be a bit more careful when whipping as well because it metamorphoses into butter faster!
      You realize you need to add a Bamix Superbox to your repertoire . . .

    I just bought a t h r i t o p mixer of the same type that you're demonstrating. I saw the problem with the mixer not incorporating ingredients. The one I have has three scrapers on it one is against the pole and two are on the sides scraping the sides. Unfortunately it's made of mostly plastic the bowls stainless steel the beaters are stainless steel an adult look is that what you don't like Pottery stuff but the rest of it seems of good quality but I can see where boss needs to up their game I agree with you you should not have had to scrape down that bowl. If you want a picture of this I can send it to you. I love your honesty

    16:38 Amy, Eric's just upset because he didn't get to use his new snowblower this year. LOL Good review, thanks, but this machine makes too much noise for my liking. I don't remember the Ankarsrum being anywhere near as loud as this one, or the KAs. Plus, it didn't mix the sugar and butter well enough, and there was that bit about the vanilla extract that didn't get mixed in.

      Not true. I got to use my snow blower once this winter. :-) But yeah, I was a little bitter :-( Noise isn't an issue now that they added the suction cups. No worries about it walking off the counter and committing mixer suicide. You can watch TV while it mixes. Before the Bosch people get upset, I'll probably have to get a decibel meter to start keeping track of these things, but you're probably right. Most KAs are relatively quiet. The Pro 6 is noisy. The Ank probably didn't make much noise. But then, this thing is likely all metal gears so it can mix concrete and not break. Thank you for watching, we appreciate it.

      LOL, yeah, I remember you used the snow machine once. But isn't the Ankarsrum also all-metal gears? It looks sturdier, but I don't know what's under the hood. Of the two, I prefer the Ankarsrum, but I don't make much bread. So I guess if I were buying a new mixer, I'd probably get the KA Classic Plus or Artisan. My K5A ProLine from 1989 still works like a charm. Thanks for your reviews, I'm always happy to see them. You and Amy do such a good job, and the reviews are always very thorough.     The plastic drive is not strong enough for use with the cookie paddles. I do believe they need to be used with the metal drive.

    The creaming did well with the scraper attachment, but was very disappointing without it. If it's required to cream with, then it should be included in the base unit, and not be an extra purchase!
    I was also disappointed that pieces were made aluminum and plastic, and not of stainless steel, since you're buying an expensive appliance, and bc I hate hand-washing dishes. It wouldn't seem that much money to do it right.

    Since they obviously received negative feedback on the Bosch "walk" they should have devised and sent out kits on the prior model. That would have been customer service at it's best.

      Thanks for watching. I agree with you, but probably from a cost perspective with so many units out there, they probably felt better by fixing the next model (which is what they did). We got some comments on our first video that had the walking issue, that long term users claimed they didn't have a walking issue or blamed us for putting the mixer on too high of a speed kneading bread. The funny thing is the current owner's manual states to combine dough on speed one for 30 seconds and then use on speed two or three for 5-7 minutes for a ten pound dough. We kneaded on the earlier video on speed three and got yelled at. I'm guessing this has to do with the suction cups, or lack thereof. This is the stuff they don't mention in their marketing materials. That is what makes me mad. The average person would never know that. So we're just trying to follow directions and use as anyone would use. But they have their loyal following, so it's a good mixer for what it does (heavy duty use). Once again, thank you for watching.       Eric: For bringing out the truth on the Bosch, and proving it in this video, you have fully gained the support of me, and many others who have been viewing the Bosch with suspicion over the years. I knew there had to be a reason for a company like Ace Hardware to discontinue carrying it due to lack of sales. Now we all know why.
      The truth sometimes hurts, but it takes someone with the integrity that you and Amy have, to finally illustrate what was really going on. Yes, the Bosch has its loyal following. But I will never believe a Bosch video, making claims that the Bosch is better at kneading and thoroughly combining ingredients than a KitchenAid. That, to me, is false advertising. Yes, I would have to give the Bosch credit for handling large amounts of dough on a daily basis. But it really suffers when average sized batches, which most people make, are involved.
      The Bosch is good for some people, but not for everybody.

    Very to read the comments below! So many people have been turned off to the Bosch because of this review. In my opinion the quality of this machine is superior to the Kitchen Aid, I have burned up 2 Kitchen Aid motors. You even mentioned in your other video how the motor couldn’t handle the quantity of dough you were making. It was getting hot and smelled and you can only run the machine for 5 min to kneed. That to me is a very big deal. As far as removing the paddles and scraper very easy turn and pull up. I guess Im more about performance than looks.

      I like the Bosch but it is not without its own issues. The bottom line is not every mixer is perfect. This mixer is great for larger batches. I really like it for that and recommend it. It is not great for smaller batches. Just like the KA is horrible on larger batches and ok on smaller ones. So...just like I've always said...for the fully equipped kitchen, you probably need one of each.

      From what we observed, the Bosch and the KAs kneed differently. The Bosch seems to use friction against the bowl to "catch" every so many revolutions and needs more kneeding time than the KA. But yes, the Bosch can do much larger batches than the KA for bread. However, unlike the KA, the Bosch can NOT kneed all bread doughs. Julia Child's classic bread recipe just spun and spun with zero kneeding in the Bosch. The KA handled it just fine. Also, the Bosch is defended by all its users that it can handle small batches, but it doesn't work very well for them. The dough extenders don't help much. So we like the Bosch because of its durability and engineering, but we know of its limits. The manual does not speak of anything about modifying recipes, but yet the users all clamor together to say that you must know how to modify the recipes and how it is user error. That is part of why we are a little hesitant to fully support the Bosch. Now we are getting ready to test the Bosch Compact. I'm excited to see how it works since it is smaller and designed totally different.

    but it didn't type all my comment. But using the scraper with the cookie paddles seems like it would work to do the creamy. read the directions on how to use them for both small and large batches. yourself and let the mixer do it. Even the creamying.

    The Ank is 10X the machine compared to the Bosch for just a few bucks more, glad I got the Ank, it's amazing to use.

      They're both excellent mixers. The Bosch can handle much larger quantities of dough and has a superior kneading action. One of the all time legends when it comes to cooking, James Beard himself proclaimed the Bosch as the gold standard for dough mixers. And he could have easily afforded any pro level mixer on the market.
      You can't go wrong with either here.

      Thanks for watching Jessie. Sorry we convinced you to drop the Bosch. Not our intention. Had we used the more expensive stainless steel bowl, it might have been a little better. But I'm thinking that flat bottom compared to the round/tapered KA bowl makes a difference on smaller batches. If you saw our KA 8 Quart Commercial test on this bread recipe, it didn't hesitate. This Bosch did slip a lot, but I'm sure it's better on other recipes. It's just that KA has never let us down on a recipe ever. I'm sure the KA 8 Quart is strong. We don't know about its longevity. We know people love the Bosch for heavy duty mixing. Hope the KA 8 lives up to your expectations. Once again, thanks for watching. We appreciate it. We'll be doing more tests with the Ank, the KA 8 and the Bosch.

      I would get the KitchenAid Commercial 8 before I would get the Bosch. It's just a more versatile machine that comes standard with a stainless steel bowl. Its flat beater, dough hook, and wire whip are all stainless steel and dishwasher safe as well. You will get more for your money with the KitchenAid, along with the simplicity of operation that you won't get with the Bosch.

    oh I don't like this machine, what alot of work just to make some cookies or anything really. I think even the larger batches in the bakeries use something different than this, like a hobart mixer. I think this would take all the fun out of baking.. You did a good job Eric of trying to not offend anyone who might like this. I love the outtakes,, you both make me laugh, and its fun to see, so thank you for inlcuding them.. thank you for continuing to test and review kitchen items..
    have you ever done anything with the Braun k650 multiquick 600 watt kitchen machine food processor? its just another thought, Im curious if you guys know anything about it..

      Thanks for watching and your comments. yeah, using this with all the part is not as fun/easy as using a KA or KA ripoff with fewer parts. But then, the Bosch lovers will use it for everything. Thanks for your comments. I was not trying to be biased and I know there are Bosch people out there that will tell me that I used it wrong. But when the manual doesn't tell you how to use it differently, then you just assume you can toss the ingredients in and hit a speed, right? This is different than the KA for sure, just like the Ank is different. Sad you have to hit certain user groups to figure out how it really works. Yup, professional bakeries will use NSF Hobarts to mix up 60 pounds of this stuff at a time, using real metal parts. Glad you watched the whole video for the outtakes. We try to put them in there for reward for watching the whole thing. :-) I have not heard of the Braun k650. 89% give it 4 or 5 stars on Amazon, that's pretty impressive.

      Yes I would assume on anything if instructions aren't given, you would just do like a regular mixer just as you said. so its sad that when its different they don't include instructions. it brought to mind the braun I mentioned the way the parts went together. alot of people like it, good reveiws, German engineering, but it has parts that snap together the booklet says, do you think I can just snap them together? NO, takes me forever to snap in a part for the processor, once you can, it works fine but if something is frustrating to me I tend to not use it.. so I have had it a number of years and been used only a handful of times. So I have my trusty old now, kitchenaid food processor on the counter and use that instead..I like to have fun when I bake, and not frustration. oh and I always watch all your guys videos to the end, yes except the knife one, but i got called away, and forgot I hadn't finished it lol... I think everyone should appreciate the time you guys take and the expense as well Im sure, to make these videos. so I thank you for that.And make sure to keep posting the out takes..

    I thought neither of you let it run on high enough speed - it might have grabbed the cookie dough - I was willing you to turn it up from here!
    I was so relieved when Eric took over to give it a fair go, but then - you too Eric, had you turned it up it could have been more effective.
    The two reasons I wouldn't purchase - plastic & burnished metal.

      Glad you watched and enjoyed. For the record, we were heavily criticized on the last Bosch for turning it up TOO high. That was the excuse for it walking. Not that it's a lightweight (heavy duty mixer) that any mixer that weight would walk if not tied down with suction cups, which this model has. hmmm. So after decades they finally gave in and added suction cups. So that should vindicate us. Well, now that it can handle higher speeds due to suction cups, the manual does say to mix on speed 1 and then knead on speed 2 or 3. So we did go to speed 2 for the kneading. I still don't think the plastic bowl is worth a dime for bread dough. It might be OK for whipping cream or if you have lots of cookie dough. We didn't go on higher speed for cookie dough because you don't want to overwork the dough. mix it and stop. It didn't do well on creaming until we used the scrapers. Now in Amy's defense, she was testing it's "everyday" ability to make a single batch, which most KitchenAid users can appreciate. In my defense, I gave up on the single loaf dough approach since I know it will fail. We only had ONE decent dough and that was in the optional stainless steel bowl. Thus for all the money we spent in extras, you could buy the Ank or consider the KA Proline 7 quart. I agree with you on the burnished metal, but then Kitchenaid does the same thing with burnished metal. They really need to use stainless steel. Gotta love the Commercial 8. Huge stainless steel parts. yippee!!! As always, love your thoughtful comments. Don't worry, we'll try this again with the stainless steel and I'll turn up the speed, but then, we'll also have the Ank and the other KAs to use too, right?????

      They mustn't be allowed to sell burnished metal here in Australia as food grade because my 5kpm5 has enamel coated attachments and so do all the tilt heads in the shops.

      You can actually get a KitchenAid Commercial 8, for less than the Bosch with the stainless bowl and all the accessories you would need to do the work that the KitchenAid already does. I just don't think the Bosch is worth it, when the Ank is so much nicer and carries the same price.

      Oh, and I forgot to mention: All the attachments for the KitchenAid Commercial 8, including the 11 tine wire whip it comes with, are stainless steel and dishwasher safe. Now who can beat that?

      Yeah, I agree. We haven't stressed the KitchenAid Commercial to see what it can really do., but I love it being all stainless steel attachments (something called NSF) that the Bosch will never have.

    Bosch America doubles the price of teh mixer compared to Germany. So in Germany, the plastic is okey, but for $400 I can understand the critic.

    Too much plastic for my taste and for the price. I went for the ank. Got it from my hubby for birthday. Looks so cool on the counter and does not have that flimsy extra scraping piece. KA was not an option anymore cause we do lots of heavy bread daughs

    Watching the mixer cream butter and sugar together was a huge let down. I have a kitchen aid that will do it without a problem. I was trying to decide between the Bosch and the Ank. Just with this test has pretty much made up my mind.
    I just went to the site and by the time I got the metal cap the stainless bowl and the cook paddles and the scraper it was about the same price as the Ank. I think the Ank looks much better and seems to perform much better. For me this was a big issue. When it comes to spending around $700 you want to get the biggest bang for the buck.

    I know Amy you like the mixers but honestly too many parts! Too many part to break , too many parts to dirty, too many parts to have to find in e middle of a recipe. I'll stick to my heaven duty kitchenaide.

      I agree with some of the parts issues. With the Kichenaide, the scraper beater is one part. Not two parts and not likely to break if it hits a cold chocolate chip. Our biggest complain is the inability to toss in the dishwasher, but then, some of Kitchenaide's parts do the same. The mixer did an OK job. You gotta remember, these Bosch people use them for small and large recipes. They're probably thrilled with the larger recipes that would kill your KA and can tolerate the smaller one's performances. I'm glad to have one small or 18 small mixers and one or three large ones to get done what we need. But I get your point. Hope you enjoyed watching this. Hope you saw the ending, like all the way to the end. If not, fast forward. We usually put the funny stuff there, especially when it's an un-sponsored product, we can be "almost" as ruthless as we want to be.

    Bosch invests in technical quality. It's not a deco thing, it's made to do a good job and it does an exceptionally hood job with both small and huge loads.

      If they wanted to do a primo job, Bosch would make it out of quality stainless metal not plastic parts, the cookie dough beaters would be metal not plastic because they are known to crack. Just sayin.
