I grew up watching Yan Can Cook too. I talk to my wife about him all the time and she looks at me like I’m crazy. He was a huge influence in my love of cooking.
I enjoyed Yan and his PBS show too. My sister and I during summer would watch his show religiously with our Dad. It was awesome to see just his smile, jokes and passion for cooking is what I have copied when I cook as well. I think he still does a show and has several books i need to purchase now.
I loved Martin Yan and Justin Wilson! Those guys could really cook! I love Mongolian beef, it's really good. But, when I was stationed in Okinawa, I used to eat Mongolian BBQ every payday! Man, Okinawa had some really great eats!

Yes, Martin Yan is "one of a kind!" I met him several times at the PBS station in San Francisco, where I volunteered to work the phones during Auctions. The man had two personalities...his private one, and his over-active "On Air" personality. When all the volunteers were in the Green Room, Martin would quietly come in and sit in a corner, quite as a bug. No one even realized it was him. However, the minute the camera's red light came on ...."BOOM" the man came alive!!

That looked so good!!! Question for you, can you take a screenshot of the light and clamp that you have on your griddle. I have a similar looking light, but not the clamp. Would like to get a clamp so it fits on my griddle like that to make it easier to cook at night. TIA. 👍👍👍
I enjoyed watching Yan when I was growing up too! Along with Justin Wilson. How about the Frugal Gourmet, Jeff Smith? Do you remember him? The first thing I learned to cook was "perfect" scrambled eggs. I owe that to Jeff Smith. 🙂
Yan was great. A little before your time maybe was Graham Kerr known as The Galloping Gourmet. He got me interested in cooking but I don’t drink like he did during his shows.😁. Enjoyed Justin Wilson too.
Yep, that looks wonderful. I watched Yan all the time. As for forgetting the onion whites, I usually forget something. I'll be plating or cleaning up and see what I forgot. My wife asked me if it hurt. Does what hurt? Being that stupid must surely cause some degree of physical pain. I had no defense. Oh, ETA: Thanks for posting the Thermapen One sale. Got it.
