Advice: The most delicious peruvian food is served in any regular restaurant or market (inexpensive). The food you tried in Astrid & Gaston is too sophisticated and does not represent the regular peruvian food. Good luck
Yes absolutely Astrid and Gaston was delicious, very sophisticated. Luckily we ate a lot of delicious, regular food in restaurants and in the markets in Cusco and Aguas Calientes! Thanks for the comment

The amount of research that you did before coming to Peru had allowed you to taste much more than any other tourist. did you try the pachamanca?.... or parihuela?.... you must try the seco de chabelo or a delicious ensalada de pata ... those are a very traditional dishes
Oh sadly, we didn’t get a chance to try those but I just looked them up online and they look and sound absolutely delicious. My wife and I are going to have to find a good Peruvian restaurant close to us so we can try these out until we are able to go back to Perú and try the real thing! Thanks for the suggestions!!
