    我一向是用白镬炒香芝麻後,放在深隔篩內,用水沖洗三幾次芝麻+白米以去麈垢,才放入攪拌機,加些水稍蓋過材料,用高速打一两分鐘停一吓共打數遍以免摩打過熱,期間如材料因太濃稠而難打動則需加些水,打数遍後停機用手觸摸漿覺夠幼滑便可倒漿入煲內,加水及冰糖攪着來開中火煮芝麻糊,煮好如覺太傑要漸進式加滾水攪拌着再煮一會至稀稠度及甜度合意便可吃。
    白芝麻也可用一湯匙南杏代替,味道更香及更易鍳别炒香程度,因為炒過度會苦。

    謝謝你的分享,我太懶了,買日本已烘焙的芝麻不用洗不用炒,用飯代替米,因為覺得用米煮的時間不夠長會鞋口,打碎芝麻時加少量水打夠時間後隔渣,將渣放回攪拌機加水再打,前後三次D渣由一大堆變成很少量,芝麻糊夠香夠濃,不過未掌握到芝麻,水,飯的黃金比例

    建議樓主掉左部搞拌機啦, 我二舊水人仔, 去逃保買部破壁機, 夠力打碎唔洗隔渣之餘, 仲有埋煲滾功能, 這些機除左速度高外, 會一路煲一路分多次打, 實唔會有渣, 最重要是全部自動化, 唔洗自己搞咁多野

    我啱啱試左。洗過曬嘅芝麻炒左都的確無乜香味,我首先用冰糖和黑糖煮左糖水再將隔左渣嘅芝麻糊水衝落去煮,覺得稀左啲,咁又將啲渣(再 Brend多幾次,用水試過滑既)加入芝麻糊煮滾,就夠曬結啦。味道都唔錯架!多謝分享

    传统做法,水磨几次,不隔渣,保留原粒原味,不浪费!芝麻黑,营养高,芝麻不便宜!

    Thank you for sharing your experience. Black Sesame Paste desert is one of my all time favourites since young. I came across your video while searching for one that will help me make the desert. Long story short, the one and only authentic old stall in my country that I faithfully patronise has not only increased its price but the standard has dropped beyond my expectation. One thing you did not mention is the use of glutinous rice flour instead of soaked rice. I think it will logically make it more dense and therefore less watery. What do you think?

    我的芝麻糊是不用隔渣,在芝麻禾咪加水放人攪拌機內,用高速打二十分鐘,會令芝蔴變成極細粉狀,再慢慢加進已煑沸片糖水,不斷攪拌至濃滑狀,完成。口感一流,不覺有粉粒。

    No wonder why every time when i made it always come out too watery. Then, I thought go outside of the box mix with the corn starch/water then consistency is more like 糊 texture. According to you, how powerful the blender makes the world of difference. That is the reason price range for a blender ranges from $30 to $300. Thank you

      it is hard to imagine that tradition Chinese "old stone gridding" method can make better texture of black sesame 糊 but it does. Your explanation to using the powerful blender makes so much sense because this dessert consist only 4 ingredients black and white sesame seeds, water and rock sugar. How could mine always come out watery? Misery solved. thank you@@McFattyHK

    芝麻胡做得好、滑、順其實好鬼難㗎!用埋搞拌機效果都唔理想。好在McFatty 有教路。要睇多兩次先至領悟其中橋妙。

    一般攪拌機嘅刀都係上面一個U下面一個到U 主要是攪拌作用 打爛 打碎 要用平的如指南針的刀型 才能攪出接近磨出來的效果

    非常好,但请恕我補充一点,就是用黑米对女人更好,原因是補血和色素更靚,而搞伴机最好分三次搞,如果速度是一至九,那么#1用一分鐘,#5用两分鐘,#9至少五分鐘。而每次只可乖半机壶。超过就不爛,且壶内温度最好是约六十至七十度C。如此則不用隔渣。補充一点,用米才有香味,用飯少了一大半香。

      @@McFattyHK 有D師父做法 不洗 有些會洗 我做法 浸黑芝麻 沙會沈底 芝蔴浮面 便撈起芝麻 看看有冇沙在底 如果有再洗 但不用浸幾小時那種

      其實 有好多RUclips 識少少 扮代表 不是指你 例如 做饅頭 白糖糕 真的高難度 我指在家庭做 斤兩又唔啱 出去買回來就當自己作品 我一看便知 真係笑死人 有些點心 如果你沒有專業工具 真的好難做到效果的 我自己也不行 大多數師父都不輕易講出斤兩 因為要搵食 加上學來不易 所以在RUclips看到的 我當大家煮飯仔 你算做得不錯 肯用心 👍

    I used vita mix blender, blend at high speed for 4 mins, then filter them through fine mesh. The residual sesame husk is less than 1 tsp . My friend used 貴夫人blender which is at the same price range came out with the same result, but the paste is less velvety.

      我覺得炒香後再洗一洗是最好的。這比較衛生。而且你若不洗炒香後放進機磨也要加水。情況也大同小異。只要洗的時間很短,香味應該不會流失很多。但吃進口就放心很多。

      @@joanna12536 一樣香,因為當初我選擇落機前冲一冲就是因為衛生的問題,亦試過冲咗才炒,反而因為濕咗炒的時間長同埋芝麻始終淋身咗無咁香,當然你可以先洗,等芝麻乾晒身才炒,但要有好多時間及耐性😉😊

    @1:00 I was ready to say the 3 words with you....HA HA WATER!!!! I will say this....there are a lot of dish out there even if you follow them 100% you really have to do a few runs b4 you understand what exactly is happening with what you are doing. I applaud you for all the little things you figured out because I too enjoy figuring why this isn't working for me but its working for others.

      SESAME WATER was killing me and that’s the moment all the illusion of making a successful dessert just snapped. 😭
      Yeah, things usually don’t get right in my first attempts. A few runs are always necessary. Still, I am fortunate enough to get a good sesame sweet soup in just 3 attempts😅

    做芝麻糊的secret不在乎skill 是在乎你部机器,我用北美通用的Brentec 搞2分钟, 唔使隔渣,turn out perfect. 芝麻先炒香,仍后洗, 不过通常没什么沙石,不用浸,用白米。冰糖。

    建議有興趣食芝麻糊的朋友投資一部高效能(每分鐘萬幾二萬轉個種)的攪拌機。不用隔渣,全部營養,味道都不會浪費。美國出品的有七年保養。閒閒地用十年八年。

      同意!我也是用vitamix做芝麻糊。這台機有2HP。攪它3分鐘左右就已經很幼滑。磨完可以再隔一隔就超幼滑。
