    Hi Chris have you thought about digging another lake, and diverting your stream into it. Then you could get a fish farm on the go. Self sustaining food source.

      SirVixIsVexed Thanks, but no, no heartbreak here 😊 We are just friends and all that's happened is my business has been much busier and I haven't been able to make it over. I'm also having lots of summer adventures of my own 😊

    Kris sushi looked awsome i have only cold smoked cheese and it was ace. I know u get your power for free but i think if you fit an air vent on the bottom of the door the wood chips will burn better. I use a old tube filter i got through work it is basically 8mm perforated plate rolled 10" long with a end cap at one end burns for about 3 hours.

    How convenient that the batteries went flat, catching little brown trout, then cut to a plate full of sea trout, or Sewin as they are known in that part of the country, good angling Chris. 🤔🤫😂😂.

    Kris, love your projects and been watching a while. For your workbench, have you thought about drilling some holes for bench dogs to act as a backstop for your projects? Watching you put your hands on the frame to hold it still made me think you might benefit from some home-made bench dogs...

    enamel bowl on top of the hot-plate set to low will work great. I use old fridge as a smoker. hotplate goes on the very bottom. and another bawl just with water to catch drip and keep the food you are smoking moist and tender. you best to use chips instead of saw-dust or shavings. apple wood goes great with fish. you need to soak chips for half-hour prior to putting them on the fire this will create much better thicker smoke. also hot-smoked white fish is delicious. thick fillets make for nicer tender meat as suppose more dried up small pieces. you can dry-salt it or soak in brine. if smoking for flavor and salting/brining beforehand then you only need 30 min to 2 hours of smoke depending on the wood type used and smoke strength. some wood smokes are more intense than others. you only need to smoke for a long periods if you are doing straight no salt route (primitive method). you can smoke brisket, pork/beef ribs, bird, cheese. some people like smoked nuts. i like to smoke chicken thighs. i first rub them with garlic/pepper/lemon/dill/olive oil paste mixture let them sit in it overnight then, then slow cook em in the oven uncovered for 1:30 minutes and them smoke them for 30 min. that stuff is made quick and easy (with some proper planning) and served with mashed taters and steamed seasonal veggies under hot souse is to die for.

    That's a neat looking little smokehouse you made. I always soaked my wood chips or pieces in alcohol to get them started burning but I had to watch out for the fire blazing and burning part of what I was trying to smoke plus sometimes I had to watch it to make sure it was still burning and smoking.

    Kris I'm a trout angler who didn't like trout , so curing and cold smoking it was somthing I tried and I loved it much better than smoked salmon , I uploaded my first setup onto RUclips it worked a treat ! Have a look if you can !
    A cutlery holder works fine ..

    Awsome build Kris. What i would do though is put another rail above the top rail and move the bottom rack to the top and go find a old hot plate that you can control the temp with and use a metal pan for the chips. That way you can do more hot or cold smoke and the element will last longer than a soldering iron lol

    Try skipping the sugar and use sea salt. Then after rinsing it put it in a bowl of clean water for half an hour to even out the saltiness. This will make the fish not to salty. Now dry it out as you did. I do not know what wood you used for smoking but beach wood is my favorite for trout and salmon.
    Also you can buy very nice cold smoke generators for fine sawdust in your next grill shop.

    chris, a friend of mine in florida built a smoker like a small shed/it was made like a log cabin w/a stove pipe in the roof & shelves built along the back wall, three shelves & one or two windows in it. They would put left over wood shavings/wood dust on the floor(which they got from a local carpenters shop) & set the wood shavings on fire & he would keep it going for a week to smoke the mullet they caught cast net fishing. You reminded me of this by you building your little wood smoker. (Just an idea for you for the future)ty for the video!

    sheep milk cheese is really healthy if grass fed...yum to cold smoking cheese 2
    wonder if you can catch fish using a 🐉 throw net...seen videos of taking hooks out of sharks by scuba divers & trying to do same for little freshwater fish but not easy to do 🍣🍙🐟

    Excellent smoke house. You might try giving it a bit of a chimney to draw the smoke out, and keep it fresh and burning. Maybe some bourbon soaked chips on top of dry chips in your soldering can wiff a screen. 😉💚💚👍👍🙇

    Reserve that liquid from the trout cure and add it to your water for a feed of rice. boil it first for 2 minutes to sanitize then lower to simmer and do the usual 2 parts water one part rice 20 minutes, shazam. Salinity and flavor will already be infused, so good.

    Omg, your little red knife! I have one of them. Was a present from my Godmother who is sadly no longer with us. Along with a serrated one. They are just insane sharp! Have never seen them for sale anywhere! Go figure. Loving your videos, very inspiring.

    The sieve method does work. I use it all the time. I have a small pot under the middle and have the dust in a horseshoe shape. Put a night light under one end and it will take hours. It looks like you were using wood shavings not saw dust and they behave differently. I haven't finished watching yet but that was a lot of salt. Usually a light dusting on each fillet is enough.

    Lookin good. If you put some sand on the floor and chuck on a few coals in the middle of the strainer, you could perhaps keep it going.

    Oh I say, living the posh life. Smoked Welsh Brown Trout for Tea. Welsh Water and the Llangefni industrial estate have polluted the rivers with diesel oil and other contaminants. I don't fly fish anymore on Anglesey because of the red algae in the lakes that can cause brain damage. Very sad. I only fish for Mackerel and Herring now. and avoid shellfish. The closer to the source the less contaminated fish will be.

    Hi Chris having watch tv programmes that show you smoke houses they always hang the fish by the tale end from wire etc apparently this gives it a more even smoked flavour, try that and let us know which you found best.
    P.s sorry I hate smoked meat,fish etc but still love to know the results!

    Dude, I love your life, but what do you to cover the cost for those things you can't make? how do you cover the taxes for the land? do you still maintain a job? I am in the States and we would get taxed off the land if we don't have some kind of income to pay the taxes... did the laws in your land dictate how you built your house....
    I love the vids....

      pretty sure the local govt is paying him to plant trees, or something like that, he may be a custodian of the land, i think it is his but maybe all the land around it is govt, i remember it being something like that

      zztechs depends on where you live in the US. Where I live (NH) "living off the land" isn't feasible because we have high property taxes (because we have no income or sales tax). In other states that might have a high sales tax, but low property tax it is possible.

      I believe he is part of the 'one planet' scheme in Wales, I think they do have a say in how you build your homestead yes, and reguarly check your progress. RUclips ad revenue may pay enough to cover his liviing costs? Would love to hear Kris' response though...

      this guy and his girl friend come from money, have you seen the tools he has ?.. and the land he's on, he bought it off Ebay !!..., and yes it doesn't matter where you live in the UK the councils ALWAYS tax you unless you can hide builds for seven years and it's a permanent structure.. The rubbish part about it all is that poor people in this country would want to live like this to live more cheaply but they can't afford it, pretty ironic really, only people with money can afford to live for next to nothing.lol

    For one min i thought how big are those " birds " ... then ja said smoker ha, Kris it looks cool , rustic , and functional , what sawdust were you using ie oak, etc. thinking if can find old whisky barrels cut and milled down to sawdust would be the best flavour? but each to their own . tho this was built as a smoker can see those Bee hive all having their unique style ?
