    3 cups water
    Instructions:
    1. Rinse the masoor dal thoroughly and soak for 15-20 minutes.
    2. Boil the dal: In a pot, add the soaked dal with 3 cups of water, turmeric powder, and salt. Let it cook on medium heat for 15-20 minutes or until the dal softens. You can also pressure cook for 2-3 whistles.
    3. Prepare the tadka (tempering): In a pan, heat oil or ghee. Add cumin seeds and mustard seeds. Let them crackle.
    4. Add chopped onions, garlic, and ginger. Sauté until the onions are golden brown.
    5. Add green chilies and tomatoes. Cook until the tomatoes soften and release oil.
    6. Add red chili powder, coriander powder, and garam masala. Mix well and cook the masala for 2-3 minutes.

    8. Adjust salt and consistency as needed. If the dal is too thick, add some water.
