    Recipe
    Ingredients:
    For the Dal:
    ¼ cup Toor dal (pigeon pea lentils)
    ¼ cup Masoor dal (red lentils)
    ¼ cup Moong dal (yellow lentils)
    ¼ cup Chana dal (split Bengal gram)
    1 medium Onion, finely chopped
    2 medium Tomatoes, finely chopped
    2-3 Green chilies, slit
    1-inch piece of Ginger, finely chopped
    4-5 cloves of Garlic, finely chopped
    1 tsp Cumin seeds
    1 tsp Mustard seeds
    2-3 dried Red chilies
    1 tsp Turmeric powder
    1 tsp Red chili powder
    1 tsp Garam masala
    1 tsp Coriander powder
    2 tbsp Ghee or oil
    Fresh Coriander leaves for garnish
    Salt to taste
    Water as needed
    1 tsp Lemon juice
    For Tempering:
    2 tbsp Ghee
    1 tsp Cumin seeds
    4-5 cloves Garlic, sliced
    1-2 dried Red chilies
    Instructions:
    1. Cook the Lentils: Wash the dals (toor, masoor, moong, and chana) and pressure cook them together with turmeric, salt, and enough water for 4-5 whistles or until soft and mushy.
    2. Prepare the Tarka:
    Heat 2 tbsp of ghee or oil in a pan.
    Add cumin seeds, mustard seeds, and dried red chilies. Once they crackle, add chopped garlic, ginger, and green chilies. Sauté until the raw smell disappears.
    Add the chopped onions and sauté until golden brown.
    Add tomatoes and cook until soft and oil starts separating.
    Add red chili powder, coriander powder, and garam masala. Cook for another minute.
    3. Mix Dal and Tarka:
    Add the cooked dal to the tarka, stir well, and simmer for 5-10 minutes to allow the flavors to blend.
    Adjust the consistency of the dal by adding water if needed. Add lemon juice and garnish with fresh coriander.
    4. Final Tempering:
    In a small pan, heat 2 tbsp of ghee. Add cumin seeds, sliced garlic, and dried red chilies. Let the garlic turn golden.
    Pour this tempering over the prepared dal before serving.
    Zeera (Cumin) Rice Recipe
    Ingredients:
    1 cup Basmati rice
    2 tbsp Ghee or oil
    1 tbsp Cumin seeds
    2 cups Water
    Salt to taste
    Fresh Coriander leaves for garnish
    Instructions:
    1. Cook the Rice:
    Wash and soak the basmati rice for 20-30 minutes. Drain and keep aside.
    2. Prepare Zeera Rice:
    Heat ghee in a deep pan. Add cumin seeds and let them sizzle.
    Add the soaked rice and stir gently for a minute to coat the rice with ghee and cumin.
    Add 2 cups of water and salt. Bring it to a boil, then reduce the heat to low. Cover the pan and cook until the rice is done and the water has evaporated (about 10-12 minutes).
    3. Garnish:
    Fluff the rice with a fork, garnish with fresh coriander leaves, and serve hot.
    Serving Suggestion:
    Serve the Mix Dal Tarka with hot Zeera Rice, along with a side of pickle and papad for a complete meal!
