    Thanks for this interview! This really help me and make me feel more confident on my decision to change into vegan baker after being a custom home baker for 11 years! I have been into vegan baking and cooking this past year and fell in love with it! I especially love the idea of supporting local suppliers and using more eco friendly designs and packaging . And also not feeling bad about charging what its worth.. thank u!!! 🥰🥰

    I agreee so much about the unreasonable fear of xantham gum! But I use this logic for processed sugar and gluten too. If you're not allergic or don't have celiac disease there is absolutely no reason to avoid gluten.
    And unprocessed sugar is just unnecessarily more expensive.. The amount of nutrients you get from using unprocessed sugar is SO miniscule and is just a waste of money. I like the taste of coconut sugar and maple syrup, but refined sugar free desserts are an expensive fad IMO.
