    鸡仔饼是傻大姐好喜欢吃的一种饼干,不管薄的还是厚的,都那么爱!纤薄酥脆的鸡仔饼,是潮流与传统的结合作品。鸡仔饼独有的香味,吃后唇齿留香,让喜爱它的人停不了口,就连小孩儿们都吃得津津有味!
    薄脆鸡仔饼做法其实一点也不难,是需要点耐心,比较长的时间烘烤,但是那么好吃的鸡仔饼,肯定让你值得一试 !
    薄脆鸡仔饼(Crispy Chicken Biscuits)
    分量: 65-68片 (10克的鸡仔饼)
    材料:
    A)
    100克 冬瓜糖 (剪碎)
    40克 蒜米(切片)
    B)
    南乳 2大块 +2汤匙南乳汁 (压烂)
    100克 食油
    1粒 蛋
    1汤匙 麦芽糖
    90克 细砂糖
    1/2 茶匙 盐
    1/2 茶匙 五香粉
    1/2 茶匙 白胡椒粉
    C)
    310克 面粉 ( 过筛)
    1茶匙 发粉 ( 过筛)
    30克 白芝麻
    30克 黑芝麻
    做法:
    1)把材料(A)一起捣烂,备用
    2)材料(B)和打烂的 (A)混合均匀,再加入(C),揉成均匀的面团
    3)让面团休息1/2小时,然后取出小团,搓圆 (每粒10克),放在铺了烤纸的烤盘上,然后放在塑料纸中间,用盖子压成薄片
    4)烤箱预热后150度,以150度烘烤18-20分钟左右或金黄色即可
    Crispy Chicken Biscuits
    Chicken biscuits are one of Shadajie favorite biscuits, whether they are thin or thick, I love them so much! The thin and crispy chicken biscuits is a combination of trend and tradition. The unique scent of the chicken biscuits leaves the lips and teeth scented after eating, so that those who love it can't stop their mouths, even the children eat it with relish!
    The preparation of thin crispy chicken biscuits is actually not difficult at all. It requires a little patience and takes a long time to bake, but such a delicious chicken biscuits is definitely worth a try!
    Crispy Chicken Biscuits
    Serving Size: 65-68 slices chicken biscuits (10g each)
    Ingredients:
    A)
    100g winter melon sugar (cut into pieces)
    40g garlic cloves (sliced)
    B)
    2 large pieces Chinese red bean curd + 2 tablespoons Chinese red bean curd juice
    100g cooking oil
    1 egg
    1 tbsp maltose
    90g caster sugar
    1/2 teaspoon salt
    1/2 teaspoon five-spice powder
    1/2 teaspoon white pepper
    C)
    310g flour (sifted)
    1 teaspoon baking powder (sifted)
    30g white sesame seeds
    30g black sesame seeds
    Practice:
    1) Mash the materials (A) together and set aside
    2) Mix the ingredients (B) and the beaten (A) evenly, then add (C) to knead into a uniform dough
    3) Let the dough rest for 1/2 hour, then take out the small balls, round them (10g each), place them on a baking tray lined with baking paper, then place them in the middle of the plastic paper, and press them into thin slices with a lid
    4) After the oven is preheated to 150 degrees, bake at 150 degrees for about 18-20 minutes until golden brown.

    Hi thanks for sharing the recipes . I won't like to try your recipe.Some I had tried baking the cookies it was crispy when it's out from the oven, but it turns out soft when it is cooled and about to store into a jar. I tasted it and they turned soft. Pls advise. Thank

      Hi Wong, you have to bake until golden brown and wait for complete cool then put into jar, if not eaten asap, you have to seal it with tape

    Sorry I missed out 2 more question. Can I put the remainder dough in the fridge for the next day or prepare the dough overnight ? Is there any taste or texture changes if keep overnight? Thanks

    Dear Shadajie.. Recipe ini bahan ya rumis tetapi semua bahan yg harum, wangi dan enak ya.. Masa process mengambil masa yg panjang bagi seseorang pelajar yd baru..     可以用 honey 来代替麦芽糖吗?食谱里用的芝麻是熟芝麻吗?

      没试过用蜜糖来代替麦芽糖,所以不是很清楚。芝麻是生的,不需要炒过。

      The purpose to add in maltosa is to regulate gluten strength and control the stick of dough. So, I don't think can be substitute.

      The end results are excellent!! Thank you again. Next I am going to try your "Char Koay Kak", which happened to be one of my favourite dish for breakfast.

      是的,全部材料x4除了发粉, 发粉不需要放太多,2茶匙就够了

      这是因为有些薄有些厚,导致烘烤不太均匀,再烤久一点就可以了。

      这款会比较粘手的,你放置1-2小时过后就不太会粘了。

      胡椒粉哦,不是花椒粉,你住大马吗?应该不难找哦。如果密封好,这个饼可以收藏1-2个月

      1/ 请问老师用的南乳是多少克呢?因为不同大小质量不同,所以做出来的鸡仔饼没那么香
      2/ 请问就是为什么我把材料ABC混合均匀之后,非常粘手呢?完全揉不成团,之后我自己再另加面粉,才能够成团,但我就想问老师就是,如果粘手的话,是可以加面粉的嚒?我怕会影响成品
      3/ 请问可以一次过放两层来烤嚒?还是必须得一层一层烤?如果一层一层烤很费时

      1.南乳我没量,2-3大块就很够了。南乳也是有很多牌子,不同牌子味道会有少许不同。
      2. 材料混合后,是粘粘的,你可以放半-1小时,粘度会减低,比较好操作,或者带手套也比较容易操作。加太多面粉会把味道冲淡的,不宜加太多。
      3.可以放两层烤,烤到最后需要观察一下,颜色金黄了,就取出。如果下面那层不够黄,再烤多几分钟才拿出来。

      @@shadajie.kitchen 好哒,我觉得我应该是加太多面粉,导致的味道有点不够,那我看视频里不是需要先揉搓面团然后再休面半小时嚒?我的完全不能像视频那样的成团,我再试试看吧,放两层烤的话温度和时长都一样是嚒?
