- London-based baker Claire Ptak teaches us her favorite loaf cakes! First up is an Upside-Down Cardamom-Spiced Plum Cake featuring a caramel-y layer of sliced fruit and a sturdy, buttery cake. Next, Lemon and Caraway Butter Cake, an elegant, bright, old-fashioned British teacake. Last but not least, a quick Double-Chocolate Loaf cake that boasts a remarkably deep color, intensely rich flavor and a plush, velvety crumb.

Claire Ptak double chocolate loaf cake
For the Wet:
In a large bowl over a double boiler melt
200g bittersweet chocolate
200g of Butter
For the dry:
In a bowl whisk together
195g AP flour
214g of white sugar
43g of Dutch processed cocoa powder
2 tsp baking power
1/4 tsp sat
Let the melted butter/chocolate mixture cool a little then mix in 3 large eggs (room temperature) one at a time.
Transfer the dry mix on the wet mix and combine (don’t worry if it’s too thick or dry)
Pour into the final mixture 1 cup of hot boiling water (I prefer 1 cup of hot boiling coffee), gradually in 2-3 additions.
Pour the batter in a large Loaf pan and bake in a 180C preheated oven for 55-60 minutes.

I want to make a banana upside down cake now since that's what I have. That chocolate loaf cake reminds me of a differently-shaped brownie and looks really good.
Just made plum upside-down cake. Came out great... rich, jammy, moderately sweet, restaurant dessert-quality item IF you like Cardamom. I'll make this again when I find fresh figs. Bravo!
The rye flour is subtle, slightly hearty, don't let taste of rye bread scare you off trying this rye flour... I learned something, for sure!!
That recipe was so good, I'm going to make lemon caraway cake, and semi-sweet chocolate cake too. This is the first Milk Street episode that inspired me to make every single recipe. Kudos to Claire Ptak and Milk Street...

Frosting and filling are superfluous to a good cake. A delicious cake should be able to stand alone.
