Merry Christmas,Charley. A heartfelt thank you to you. My youngest son has just been diagnosed with adult onset diabetes and has recently started on insulin. Last weekend he and his family came to mine for our Christmas celebration . I was fine with the main part of the meal but was struggling with a suitable dessert. I put “diabetic dessert “ into U tube search and up popped Charley to the rescue! I made your Lemon Diabetic Cake and it went down a treat with all of us. Thank you so much. Wishing you all the best for the New Year. Love from Ottawa, Canada.

Hi Charlie. Merry Christmas and I wish you a happy, healthy, and prosperous 2024! Thank you for pronouncing your pecan pie properly. It's pronounced as you did...p' cahn...pie....NOT "pee can". I grew up in the south and we never had a celebration from Christmas to Christenings or funerals without a pecan pie taking pride of place on the dinner table. Your Christmas menu looks perfect. A feast of simple, honest, and damned well DELICIOUS foods! As for me...I'm recovering from a triple by-pass surgery so My holiday meal consisted of a big ass pot of Cajun GUMBO...with chicken, Andouille Sausage, crabs, shrimp ( swrimps ) and ursters ...AKA oysters. I love me some gumbo! My gumbo is Cajun...not Creole...as I got my initial recipe from my ex mother and father in law. They were Cajun and I'll put their gumbo up against anybody's on the bayou. My gumbo still...after almost 50 years isn't quite as good as Alberta's and Falsen Cambre's gumbo but mine will still make you stand right up and sass yo mama! Keep up the good work, buddy...have a great 2024!
