1. It's so nice to see a cooking show where the host has actually worked in a professional kitchen. 2. It's also nice to see such a well produced cooking show about plant-based food. 3. If I understand correctly, the camera crew are students? Tell them to drop out and hire them; they are fantastic. 4. I made these for dinner last night for non-vegans and they were loved. Against my intuition, the pickles absolutely made the dish. 5. Wicked Healthy, huh? As an upstate New Yorker, we say 'wicked' to mean 'very'. I'm guessing you're a New Englander originally, too?
Hey Richard, first of all, thank you for your thoughtful comments. We really appreciate the positive feedback and reactions like yours very much validate why we're doing this in the first place! The camera crew are all pros (but always learning!) and they are cherished (and well fed!). Glad that this sandwich was a hit with the non-vegans! As a former non-vegan myself, it's an important audience to appeal to. It means we're doing something right if we can come up with food that satisfies anyone who eats it! That's the idea-make delicious food that just happens to be vegan. You are correct! I am originally from New Hampshire, which is a wicked awesome place to be from.
Wicked indeed! Just tried this out and still savoring the amazing flavors, absolutely love your pan-press / smash technique to get the mushrooms wonderfully crispy. Thank you for letting us in on your secret! Cheers from Japan!
I watched your cluster mushroom steak video the other day and now this one. They both look delicious. I am going to have to try them soon. Glad to have found your channel. 🙂👍
Thank you for spreading the love of mushrooms to the less adventurous among us! I can't tell you how many friends I have who don't like mushrooms and worry that they're poisonous... (despite folks eating them just fine... very strange). Anyway, I love having something to show them
Derek this sandwich looks delicious. That's a real sandwich right there Derek. I like how you always mention the animals because they need us to speak up for them. Exactly Derek you don't need to eat animals because animals are friends. A imams don't want to be eaten either they want to live. You are exactly right Derek eating plant based is better for the planet and better for us. Derek sarno is the man when it comes to cooking. All of your recipes are always good Derek. You are awesome Derek.
Been enjoying your videos today...thank you. And I love this cluster-mushroom technique! Have you ever worked with Laetiporus a/k/a "Chicken of the Wood"? It's a gorgeous mushroom native to the Appalachians.
Your pressed mushroom technique is a total game changer for me! Honestly, it's given me a whole new part of cooking to get excited about. I even got some cast iron pans! Thanks again from Scotland. PS, any chanterelle recipes? I forage for them here.

😂 I'm sure your Philly raised man-human is SUPER excited to watch the 49ers in the big game! Maybe if you keep him distracted by the Mushroom Steak & Cheese he'll only notice the commercials?!
Bianca, definitely give other mushrooms a try! While the oyster mushroom clusters are what give this specific pressing technique the final product that comes out the way it looks here, you can attain a very similar flavor using almost any other mushroom. Depending on the type you choose, you might need to slice them up first so that you create more surface area to get the crispy/seared edges and catch the seasonings. Hope this helps!
We use fresh A LOT and we use granulated when I don't want it to burn, depends what we're making. Nothing at all wrong with using dried herbs and spices when they are quality.
This one was awesome! I can’t wait to make it for the super bow! But I wanted to know if you can show how to make a wicked healthy vegan butter. All of these new vegan processed foods and fast food items are full of oils and are not healthy. They do make vegan cheeses that do not have oil but only have either cashews or almonds.
