VOX KITCHEN Lomo Saltado Copycat Recipe

  • Hi Everyone!
    I'm back with another copycat recipe and this time it's from one of my favorite Orange County restaurants - Vox Kitchen ! It's originally a dish originating from Peru with Chinese influences and Vox Kitchen (a very popular restaurant in Little Saigon, Orange County, CA) has an excellent version of it, served with their delicious Aji sauce! It has a Vietnamese flare to it as the beef is cooked "Bo Luc Lac or Shaking Beef" style. I hope you all enjoy!

    Ingredients (Serves 2)
    Aji Sauce:
    1 cup cilantro
    1/2 cup mayo
    1 tbsp olive oil
    2 tbs parmesan cheese
    1 tsp white vinegar
    1/4 lime
    1/4 cup water
    2 jalapenos, chopped
    2 cloves garlic, chopped
    Extra lime, salt, pepper and sugar to taste
    Lomo Saltado
    6 oz ribeye or filet mignon
    1 red onion, chopped in large pieces
    1 plum tomato, chopped in large pieces, with seeds removed
    1 clove minced garlic
    1/4 lime
    French fries (seasoned fries or natural cut fries)
    1/2 tbsp Maggi seasoning
    1/2 tbsp fish sauce
    1/2 tbsp sugar
    1/2 tbsp water
    Serve with rice and a fried egg!

    Just a fun fact. A lot of Peruvian food is a mix between Asian and native cultures. We use soy sauce in many of or recipes. The Chinese and natives cooked together along time ago and blended the foods together

    Lomo saltado already has asian influence. Its parts of Peru's Chifa cuisine, which is chinese peruvian. Another asian peruvian trend that's been growing is Japanese Peruvian food dubbed Nikkei.

    VOX Kitchen and Sup Noodle have my favorite Lomo Saltado. I wonder how similar this is to Sup Noodle's considering they're both Kei Concepts restaurants
