    I've only just learned about this bread. When I saw a picture of the beautiful patterns, I had to find out how to make it. Thank you for the clear instructions and the science part as well. Science is a subject that's sadly neglected as being boring, but people don't realize we use science in our lives every day. I've thought about doing a channel about the science in cooking

    No Tigers were hurt in the making of this video.
    Seriously that was the clearest recipe I have seen. I am not a natural cook/baker so the importance is in the detail for me and you left nothing unexplained. Thank you.

      I agree. I too am from the Bay. In fact, I’m getting a monster deli today for all day munchies. I like Nacho Cheese Doritos or Dijon Mustard chips as a compliment. It goes together well. 😋👍🏼

    I tried this bread today and it turned out pretty good.Halved the recipe so that it's easy to manage the dough. It was very crunchy n tasty. Not as pretty looking as yours but still it was well liked by everyone at home.Thanks for sharing

    Just a question ,,, while making the dough will we be adding lukewarm water ?

      Yes always warm water.. too hot will kill the dough and too cold will deactivate the yeast. :) sorry for not being clear

    Hi Sushma, Thank you very much for this wonderful recipe. I made this bread and it turned out beautifully. However, just a query. How do I keep the crust crunchy for a longer time. Once I sliced the bread and kept it in a airtight container, the crust turned soft. Also when i kept it in the fridge and warmed it in the microwave, the crust was soft and grainy. Pls guide

      good. Leave out seseme oil anyway because it has a strong flavor. Vegetable oil should be fine.

    Hii.. will you suggest how long this bread will last? If we will not use any calcium powder...or any other rising agents

      Hi Hetal.. Will last 2 days on the counter top and months in freezer.. I do not use any external agents for my bread so won't be able to answer the second part of your question. sorry

    If we make half the reciepe than do we hve to use 1/2 tspn yeast for 1 1/2 cup flour? Any veg oil can be used?

      If you want to transcribe it to half, or double, it's good to work out the percentages relative to the amount of flour. Keep those percentages when scaling the recipe up or down, and you're good to go no matter how big or small your batch.

      Yes simply halve all the ingredients and like daniel mentioned it is good to go by percentages but halving will work for this recipe.. any veg oil can be used but try and use sesame oil if you can for the rice flour paste
