I like the small pieces of veggies too. It just brings it together. I believe they add pea's and carrots to it. The pieces are bite size n so 🍋 lemony n decilous! Interesting you prepare the chicken in bite-sized pieces, as with General Tso's chicken, orange chicken or sesame chicken, for, in Chinese restaurants, I've most often seen lemon chicken presented as a whole deep-fried chicken-breast fillet that's then cut into strips. Your version looks equally appealing, and also just looks delicious. I especially like that you don't add yellow food coloring to achieve that neon-yellow hue the dish often has in Chinese restaurants. Well done! You can add more water to constitute a more diluted sauce, but the downside is that it will wet the chicken too much and make it soggy(no longer crispy).
It is a leavening agent, thereby helping to expand the coating during deep frying and creates a crispy texture. Baking Soda (sodium bicarbonate) works the same way too.
What worries me is that I usually cook most stuff in cast iron. And the one time I tried to use red wine in it, it actually damaged the seasoning. Itt didn't strip it off or anything but you could tell it kind of damaged it from the acid in the seasoning. Anyting cast iron where there's a hard acid, I don't know if it's a good combination. But it looks good!

I have made it, I omitted the salt, and used MSG to season the chicken in the marinade, the MSG gave it a real flavour kick over all 10/10
