There are a few toys that I can't unlock in 3.0 that include Disney Cruise stuff, Sugar Rush stands, and sidekick items no matter what I do, is there a way to obtain those easily on Wii U?

No. There is no way to obtain them at all, because they required you to connect to the servers, and the servers no longer exist.
