Taylor already knew about Zayn's project because she is good friends with Gigi Hadid, Zayn's girlfriend at the time. She's already heard the music Jack had composed because she is good friends with him too and he'd played it for her before Zayn had asked her. She said yes, telling Zayn she liked the song. She then went away and wrote the lyrics and melody to the song. She and Zayn then sang it as a duet together and Jack produced it.
We can now understand why Zayn is taking credit for the song in the interview : He was the original artist that was asked to participate on the movie soundtrack. Therefore, it was his project. He was the inspiration for the collaboration in the first place. He was the impetus for the entire project and the instigator of the collaboration between Taylor, Jack and him. Nonetheless, he did not write the song. Taylor wrote the lyrics and melody, and Sam Dew and Jack composed the music.
