Do you get a lot of smoke flavour when cooking it before you sear it? What if you want to cook a big prime rib and don’t want to much smoke flavour? Best to use a different grill?

I have the pit boss KC combo and I’m starting to think it’s defective. I bought it 3 weeks ago. Here’s why. I literally have a pork shoulder (pulled pork) smoking right this second and it’s been in there for 10.5 hours! I started it at 250 and internal temp stalled at 127 after 7 hours! I’ve increased the temp to 300 and internal temp finally reached 160 right now. This can’t be normal. Last weekend I smoked ribs when replied to you and same issue. internal Temp just won’t reach what it’s suppose to. I smoked burgers right after my purchase and even those small patties took over 2 hours to reach the internal temp I was looking for when set to 275. Have you noticed this issue?

@@thegalleryBBQ i updated my original post to collect some errors. Does it sound like there’s something up? I remember after 4.5 hours I was at 113 internal. Three hours after that internal increased by only 13 degrees and temp was still at 250. This seems too slow, no??
@@Blackhawk556. Its to hard to say. Have you calibrated your hand held?? You really need to measure some temps inside the pit. Thats the only way to know!

Hi Bobby. I sold my KC Combo as it was just to big for my needs. That said. I did love it except for the lack of smoke flavor. I know own the Pit Boss 820 which is perfect for my needs and add more smoke flavor then the KC IMHO. If have any specific questions please feel free to shoot me an email gallerybbq@gmail.com
I have owned a KC Combo for over a year now. While the pellet stove and griddle each function OK, I can’t recommend it for the following reasons. 1. The integral metal lid on the griddle half does not keep stormwater out, it penetrates the lid and pools on the griddle surface causing rust if not caught and rectified quickly. 2. Even if you buy the fitted fabric cover, that is poor quality and degrades quickly in UV if the unit is kept outdoors. Additionally, the metal tabs that hold the lids open during use will cause the cover to rip at those points during storms, I’ve gone through two covers so far with each lasting less than six months before tearing so I’ve had to “nerdgineer” a fix by using padding and plastic sheeting under the fabric cover to limit ripping of the cover and keep rain out of the griddle. 3. The griddle is on the small size, probably only suitable for 1-person households. Issues 1 & 2 are clearly design flaws. I’m wishing I’d bought separate pellet grill and griddle units. I believe the increased initial cost would be offset by their longevity, usability, and convenience.

I think you can attach some match or someway to light it.

Only prime when first lit... Even after a pellet dump or cleaning you still have pellets in the pipe ready to feed.

I do my potatoes the same way, except I just pierce the skin. No need to sink the fork in an inch deep!
