    I just made this almost exactly like he did and it is outstanding. I can’t even cook but I am follow directions. Was on my Primo Kamado but smoke ring etc. Very good. Thank you.

    Love the cook. With beef prices I’m getting the most bang for the buck while getting premium taste with chuck roasts. This Italian version is on the roster. Great cook!

    You didn’t mention the time in braise, or finish temp, can you share?

      Didnt take a finishing temp, just checked for tenderness. Time was about 2 hrs post-baptism

    Pardon me sir, proud Patreon supporter, but I thought Italian beef was made with shoulder clod, or steamship round?

      The recipes I saw and have eaten before call for top round but I wanted to use chuck for the extra marbling and that's what they call for in the Beef Kit recipe.

      @@LeRoyandLewisBBQ gotcha, a steamship round, or shoulder clod do work great, but then you have a metric ass ton ( official technical term) of Italian beef. Thank you for your reply and clarification. Love the channel and the videos.
