Love the cook. With beef prices I’m getting the most bang for the buck while getting premium taste with chuck roasts. This Italian version is on the roster. Great cook!
The recipes I saw and have eaten before call for top round but I wanted to use chuck for the extra marbling and that's what they call for in the Beef Kit recipe.

Didnt take a finishing temp, just checked for tenderness. Time was about 2 hrs post-baptism
