After first meeting Hercules on the Argo (Medea having become Jason's girlfriend and later wife), and then her betrayal and vengeance, Medea later met Hercules when he recovering from one of his episodes (he used to occasionally go berserk and murder people, usually due to various curses). After leaving Jason, Medea journeyed to Thebes. There her path crossed again with a berserk Hercules who she healed from the curse of Hera that led him to slay his sons (something Medea could presumably relate to given what happened to her own children), and they spent some time together (in a non-romantic fashion) before parting ways. I don't think Fate actually delves much into this history, but it's an interesting connection.

Believe it or not, Caster is actually a cupcacke and legit wife material. She's just 5% psychotic yandere. The anime just puts her in a villain position, as far as Fate-verse servants, she's among the more normal ones. Most of the killing she did while she was alive, at least in the fate-verse, was because she was being controlled/brainwashed. She's also a fan favorite in Fate Grand Order (the gacha game) and there's even a younger version of her who is literally a healer, also known for being a great cook.
It sounds weird, but a witch in Nasuverse is not just a female mage. They are supernatural beings and generally don't mix with people. Those who do are considered less than humans even by human magi, so the word "witch" here is more of a "derogatory" term for bitchy, cruel female magic users, femme fatale, etc...than just a name for female magi . That's why Medea hates it so much, part of it because of her own story. The story of Medea is rather tragic and interesting. Behind the terrible things she did, like killing her brothers and betraying her own country, to aid the Argonauts, it was Aphrodite (or, in real life myth, Hera) controlling her in order to help Jason in his quest. When the quest was over, Aphrodite basically left Medea to deal with the consequences when people turned on Medea and denounced her as a witch for, of course, all the killings and betrayals she did. In real life myth, she got kinda a better ending since it was Hera who was controlling her (in fact, the whole Argonauts quest was Hera's grand plan), and "gave" her to Jason as a reward. Jason then decided to cheat on her which was a slap in the face of Hera, the Goddess of Marriage and Family, so Medea got away with killing the other woman and her sons.
Interestingly, most of Medea's flashback this episode is anime original retcon, the VN only gave broad strokes (that this flashback even contradicted, but eh, this is actually better). Since then, all of this has been treated as canon, and her original Master even made appearances in other Fate stuffs. These scenes actually made some nods to other things in the franchise too. One of them that you've caught is the mention of El-Melloi, the professor from Zero who was Master of Diarmuid. Also showing Medea getting knocked the fuck down by a normal ass guy kinda foreshadow her weakness I guess... This episode reveals a lot about Medea's character: she's not *that* evil, she's sucking lifeforce from people in the city (without killing) simply because she needs to to win the Grail. Her current Master, Kuzuki, is not a Magus at all, kind of like Shinji (he doesn't know anything btw, she just explained it all to him offscreen) so she also doesn't get any magical energy.

Caster is arguably the main hero so far: she saved 50 kids (breaking Rin's record in Zero) at what she thought would be the cost of her own life, and destroyed an evil scum bag....
