It's cool! This is possible because the plane does not have full tanks, neither passengers nor luggage. It's still steeper than it can maintain so the pilot has to level it out so it doesn't stall and fall back.
You may be right. Although they would likely test the plane in real flight conditions including the correct weight. Either way they wouldn’t take off like this with passengers inside even though they could. It would be fun though.

The flight attendants wouldn’t be worried about the take off 😂 That take off would be fun as hell. Rise to 23000’ in 2 minutes smooth sailing. It’s if they rise to 30000 then dip that nose down and drop to 15000 and rise again like a roller coaster where things might get a little questionable
