    Hi Alice! On this end, I have to say that we’ve really been enjoying the Xin Gong Yi with sashimi! It’s flavorful enough to support the fish, but not overpowering at all- just a nice gentle refreshing complement to the clean fish. It has pretty much overtaken sake/beer as our beverage of choice! One time we tried the Mi Lan Xiang with sashimi and fell in absolute love. Sadly that was our sample size. Now that it’s cooling down and our tea stock quickly dwindling, we should be placing another order sooner than later! I look forward to trying some of the pairings you mentioned here!

      Thanks for sharing, that sounds fantastic! In many ways tea does seem like a more appropriate pairing than alcohol for the delicate taste of sashimi. Another potential pairing would be our Silver Needle Reserve, cold brewed -- it has a beautifully crisp, floral, sweet, and smooth taste that actually reminds us a lot of daiginjo sake. We'd love to hear your thoughts if you try this!
