Great tutorial. Another approach would be to use a smaller freezer paper inset (smaller square with quadrant registration marks). Fold fabric and then align the quad fold with the FP quad registration marks.
I'm assuming you are talking about the inside circle? We just cut it about an inch bigger than our desired finished circle then trim down after it's sewn. That way we don't have to worry about it being too small.
Too fussy a technique for me but I see it has its place. Excellent tutorial video. Thank you for making it. It's always good to have options.

The sewing is better accomplished with a zipper foot which allows you to get closer to the stitching line.

Which foot did you use to sew the circle?
We used a 1/4" foot. We love using it for quilting because we are able to line our fabric up right along the edge.
