I'm not a paleontologist but it sure seems to me that there is a better(less destructive) way of removing objects from the earth that aren't encased in rock? Water maybe? Sure seems like picks and knives would break a lot of stuff. Lastly, click-bait for sure but couldn't resist watching once I read the comments.
I just started watching this show. So these guys are ranch owners who fossil hunt to supplement their income. They don't earn enough money off their small cattle operations. So they aren't schooled or trained.
Water can destroy bone or cause the clay to stick to the work tools. The goal is to keep as much together as possible and water can cause those bones to be displaced. The best way is to dig a good distance below the fossil and plaster from the ground up. Once encased it can be prepped in a lab for better tool work and re assembly.
