That guy with the fanning technique was so good, I did it in marching band where we would fan the top drums on the tenors, I've never seen it done that well

I use that first chop and variations of it all the time - try splitting the right hand onto the toms and L on the snare for a chop you can throw in anywhere for a 16.

looks like he grips closer to the tip and swings the base of the stick (closer to the abdomen) through the edge of the hat twice, and then on the second hit the wrist turns enough that the tip also makes contact. I'm not a drummer but I do a similar thing with a little wooden gear on a stick and my bass guitar string.
