Mam.. I use to make Jowar roti after seeing ur receipe.. In that, u have mentioned that Jowar needs to be added to boiling water , rest, knead and make roti... But here with normal temp water.. Could you plz tell me the difference and the use of adding it to boiling water...
1. If jowri flour is fresh less than 7days old, you can use normal water to kned, it wont break. 2. If jowari flour is older, adding hot water to knead helps binding. -- better to add warm water, it helps to knead properly. Makes & keeps bhakris sift

Hi Ma'am When we use the whole grain we usually soak it to reduce the phytic acid content (since this causes bloating, gas etc). Doesn't that apply to the flour as well ?, especially the instant version. I asked this because I observed that I felt bloated and developed gas on the days I consumed instant dosa/ cheela made from gluten free grain/seed flour. But it is not the case when I pre soak or ferment. Please clarify
