I am Danish, from the island of Fyn [Ærøskøbing is from an island south of here called Ærø]. Let me explain what they're eating. It's a Danish cheese type called Danbo. What you do is that is you put a good hunk of it in an empty pot, and then put it in the windowshelf. Everyday when people drink, there are left over, and those left over are poured on the cheese. After about a month, the cheese is a delicacy, and sells for a lot at Danish taverns.
