I love doing shallot, lemon, parsley, white wine, and a pat of butter on top. We love our fish prepared this way! It is so moist from the steamed effect
Yeah a bit of water and some white wine vinegar for the acidity would do it! You could use a small amount of stock instead as well - though again I'd use vinegar or citrus for a bit of bite as well
