Hi there. It's great that you gave it a go. I have a Cadac Safari Chef and am going to try cooking scones first. Try lifting them up off the grill with a small wire rack. That way the hot air can circulate. I think I would cook the croissants on low all the way as it is a small oven area, to heat. You could also try using a probe thermometer for the internal temperature of the croissants. I was thinking about installing a cooking thermometer in the lid also.
I’ve got the older Safari Chef, rather than the slotted griddle you have it came with a wire grill and a heat deflector, supposedly for barbecuing, that would probably work better as it would allow airflow beneath the croissants.

Nice video, unfortunate about the results,but worth a try ,try using a round cooling rack,will find in most supermarkets

try on the wire mesh tray
Use your pot stand on the flat griddle pan with your bbq mat on top to hold the croissants
