    Thick Cut Chops on the Outlaw Hybrid
    I love a good pork chop..... But I really love a good thick cut smoked chop! This recipe is very simple and is easily made your own.
    **WHAT YOU NEED**
    2" Thick Pork Chops (Thick Cut)
    Sausage Seasoning (Malcom's Spicy)
    Your Favorite BBQ Rub
    Your Favorite BBQ Sauce
    Captain Rodneys or any pepper jelly
    First thing to consider is sourcing a good thick pork chop. Reach out to your local butcher and let them know what you are looking for. This recipe can work for any pork chop but the thicker ones are definitely better in my opinion.
    Season the chops with the sausage seasoning and bbq rub. Allow to sit out while the pit comes up to temp.
    We fired up the Outlaw with some Royal Oak Charcoal and got it running about 275. Place the chops on the pit and use a probe to monitor the internal temps of the chops.
    While the chops are smoking, mix up your sauce. A good 50/50 mixture of pepper jelly and sauce works really well. This is something you can make your own and create some great flavors.
    Once the chops hit about 135, its time to start glazing. I glazed both sides and touched up the rub where it was needed. Allow the chops to cook to 145 and remove from the heat and allow to rest. This is the most important part. Pork chops are easily over cooked and taking them to 145 really makes sure you have that juicy chop!

    Man Mark you are killing it , I am hoping I can get my fire managing skill honed in good on my new Outlaw Patio model. I just have to get some more consistent splits. But I think I started off with too much Royal Oak charcoal briquettes. And I have to try Malcoms sausage seasoning.

      Just a couple of cooks. These pits are very forgiving so it wasn’t too bad learning the fire and air flow.

      Heck I have fired this pit up for a couple of wings... No problem at all. It doesnt take much to get to temp and stay there.

    Looks incredible but I will never cook my chops or roast past 120-125 and rest it for a few minutes. The pink center is where it’s at!!
    On a side note ive had Captain Rodney and it is the shit mixed as he did. Gonna be looking to buy the seasoning👍🏻Malcom is The Man!
