I just received your Mississippi Grind and followed this recipe. It was the beyond great! I will only be cooking pork chops this way with your rub from now on! Will try New York strips the same way and see how it turns out.
Simon Guerrero they aren’t. They just sit on top of the angle. It’s super simple. I planned on attaching but never did. It works great with having too.

Bad ass video. Hey can you tell me how’s you rigged up those grill grates with angle iron.
The angle iron catches the factory ledge and they hold their self in place. Nothing fancy. Just a piece of 1/2” angle cut to length.

Did you add anything to the butter or is it just unsalted butter?
It is just salted brown butter. You always could add herbs or something like that.

Grill grates are just sitting on two pieces of 3/4” angle iron cut to length. We jus let use white cotton glove for liners.
