    Pinakbet is a popular Filipino dish that is very healthy and nutritious, filled with many vegetables. Most ingredients are readily available while some need to be bought in Chinatown. Instead of fresh pork, you can substitute fresh shrimp or roast pork with the crispy skin to save time. There are many variations depending on preference or what region of the Philippines the recipe came from. Bittermelon is usually added but can be omitted if one is not used to its bitterness.

    Without the bittermelon or ampalaya, it is not pinakbet. The tomatoes must be cook in the beginning for the flavor to mix with the sauce. You do not mix the veggies continuously but shake the pot to stir the mixture. This is not the traditional way to cook this dish.😁😁😁

    As a Filipino I thank you for always highlighting our dishes, but why didn’t you add bagoong or fermented fish paste/sauce? It adds more to the pinakbet? I know there are different versions, but I’m curious as to why you added garlic? I don’t put that in mine.

    Hello, Ilokano here. I just wondered why you never added any bagoong on your pinakbet. The bagoong can be either the ilokano fish bagoong or the bagoong alamang. Because as far as I know the quintessential ingredient of this dish is the bagoong. Its very odd to call this dish pinakbet without it.

      I'm the only one who eats it and the family can't stand the smell or taste. Until we get an outdoor stove. It'll be on my list.

    Focus the camera on the food more than the cook. We want to see the finish product instead of the casserole & the lady.

      I like bittermelon too but my family can't stand it. I will take some and add bitter melon for me.

    Hello, do you ever use bittermelon (ampalaya) in your pinackbet?
    I saw your original message. Yes, it’s bitter, but it’s delicious bitter which makes it “PINACKBET”. To me this is more dinengdeng than Pinackbet. Thank you for all your delicious recipes. Mahalo plenty.

      Yes, I put some aside just for me as the family doesn't like bitter melon. I also make it in several ways.

    What no Bittermelone or Ampalaya ? I thought that was an essential vegetable for this dish? I have seen it with the yellow squash instead of the Cayote as well. But it still looks pretty good.

      I love bittermelon but my family can't stand it. Everyone makes it different and bagoong is definitely good.
