    seeing all these dishes and bakeries shocks me for whatever reason😭 they look so fancy compared to the part of mexico i always go to, would love to visit

    The Californian influence probably means Baja California Mexico not California USA, that looks like Baja med and ensenada esque ceviche, not really Californian USA

      Tbh it’s Sinaloense seafood dishes and style. A lot of Sonorenses and Sinaloenses migrate to BC and have been doing so since a long time ago before other Mexicans came to BC. Thus that kind of seafood style and dishes is really popular all throughout BC. If we are talking about actual Baja style seafood then it would be tacos de pescado capeados, langosta, and machaca de mantarraya. Seafood dishes like torre de mariscos, tostadas de atún with sesame seeds or fried leeks, tostadas de atún with mango, aguachile, caguamanta, molcajete frío de mariscos, taco gobernador, marlin ahumado are from Sonora and Sinaloa. Those two states, especially Sinaloa, are characterized by their crazy and elaborate preparations when it comes to seafood. Not just seafood but also the caren asada and hot dogs come from Sonora but it changes a bit. Funnily enough, Tijuaneses love that kind of seafood and claim it as theirs when it’s not but at the same time they complain about people from those states coming there as if TJ is not majority compromised of people from all over Mexico who came at the start of the 20th century.

    That seafood looks so good!Its actually Sinaloa style seafood than California/Baja California influence. Baja California is known for having people from all over Mexico and it has a lot migrants and people with ancestry from Sinaloa and that’s why that type of Sinaloense seafood is popular there and evens gets confused for being Baja style but it’s not local to them or part of their state cuisine. For seafood that originated or that’s actually part of their state cuisine, Baja has fried fish tacos and Ensenada lobsters.
