It's always good to get recommendations of hidden gems. We hope to return to Apatzingán some day and hopefully we'll have the chance to check out some (or all) of these places that you've mentioned. Thanks Leiru Saira.
The original chavindecas are with beef with adobo and chihuahua cheese. Now days most of the places just make them with carne asada. Chavindecas Rosy’s became famous just because of the size of the chavindecas. Other dishes worth trying in Apatzingan, enchiladas with cecina, for breakfast uchepos. (I grew up there 😋)
Hello and Happy New Year Jesúzo Thank you for the information! Adobo beef and Chihuahua cheese sounds lovely on a chavindeca! Indeed, the size of the chavindecas at Rosy's is enough to make them famous! Rosy 3 near the Cardenas monument seems to have late night/early morning hours - this also keeps them very popular according to the folks that work there. Someday we'll return to Apatzingán for more food - we really enjoyed our time there! Is an uchepo much different than a corrunda? Where in Apatzingán do you recommend for chavindecas and uchepos? We first had had cecina and echiladas in Zamora - is this dish also from Apazingan?
@@ACoupleofDrifters happy new year. Yes, uchepos are very different than circundas, uchepos are with corn than has not been ripped all the ay, making it very tender, they are a bit sweet and a bit salty. With jocoque (or if they don’t have jocoque, with sour cream) and queso seco (coruja, un Apatzingán they call it seco or “de pieza”) and some salsa verde are very delicious, super popular for breakfast. You can fin some very good ones on the street of Donato Bravo Izquierdo, 2 blocks from Colegio La Paz, there is a lady that sells them in the mornings outside a store that is in the corner (for sure she used to be there in the weekends, has been a while since the last time I was in Apatzingán). The best uchepos are in Uchepos Sandoval in Infonavit Los Pochotes. Or worst case you can always get some decent ones in the Mercado del Ahuate (btw, the enchiladas there, at night, absolutely amazing, maybe expensive for enchiladas in Apatzingán, but soo good). And for Chavindecas in Rosy’s or in Uvita. I don’t think you can find any with the original recipe anymore, for the most let is going to be just with asada. The guy that created them moved out of Apatzingán a while back and unfortunately e passed away also a while back. Not sure if you have tried the en hiladas in Pátzcuaro, similar style to the ones in Apatzingán, in Morelia they prepared them similarly but for some reason taste a bit different. Other dish worth trying, birria de chivo, un Apatzingán you can find a very good one by the public library. In. Ieva Italia there is one that is famous (I know how to get there but don’t really know how to explain it, it’s on the main road, if you ask pretty much everyone can tell you). And also in Lombardía there is o e that is very good, by the round about in Lombardía, with “las güeras”.
@@ACoupleofDrifters the birria de chivo I recommended even though is originally from Jalisco because that region of Michoacán has a lot of influence from Jalisco (Guadalajara is a 3 or 4 hour drive and a very popular destination for College for the people of Apatzingán), the recipes do vary a little bit, so the Jalisco style and what you’ll find in Michoacán as far as birria is a slightly different.

We were pleasantly surprised to find real guacamole in Michoacan - and it makes sense we'd get it there! In our experience much of the "guacamole salsa" served in restaurants in Mexico is quite watery - many restaurants we've been to throughout the country serve a highly-processed concoction from a jar and the real stuff is very difficult to come by. Luckily, it's easy to make at home instead! Michoacan also features the best enchiladas we've ever had - these are called enchiladas placeras (plaza enchiladas). The corn tortilla is dipped in a guajillo chile salsa, stuffed (usually with carrots and potatoes) and then quickly shallow fried. The end result isn't crispy at all but the frying process changes the flavor profile of the salsa and it "bakes" on the tortilla, like a bit of of a salsa crust.
