How does the shape you chose work?
Does it stick good and have a fairly smooth release from the wood?
Heck of a good idea cutting the ax head in two, making it lighter and oh hey I've got another one.

what bits do you use for going into the metal

Can you use a cutting torch on a project like this?

You could but you would probably want to use the torch to re-harden the tip (there are plenty of videos showing color and techniques) because the torch anneals the metal next to the cut. You could also torch cut (quickly and run a bit higher oxygen pressure) the contour leaving about 1/2" extra metal then finish with a grinder using flap wheels (grinding rocks suck by comparison).
