Love making watermelon rind pickles. My grandma would put cinnamon candy in some of the jars that would always be on the relish trays on Christmas and Thanksgiving. One of my recipes calls for a cinnamon stick,white vinegar, sugar, pickling spice, and 1/2 of a lemon. You soak the rind pieces in a salt water brine overnight(24hours) and rinse them before canning them in the sweet brine. 🍉

My Mom made watermelon pickles but made them into larger chunks than you did here and didn’t peel off all of the green rind, so they striped. I think maybe her brine recipe was a little different.I don’t remember the red pepper flakes or the black pepper. Corns so they were more sweet. They are delicious.
My mother-in-law always made watermelon rind pickles, and then she made Christmas pickles with them by melting red-hot candies in the pickle brine.. those were my favorites!
NOW... my mother-in-law grew Black Diamond watermelons for her watermelon rind pickles because they had a thicker rind.. so the rind pickles were bigger after peeling the green and had a better crunch ..she also grew sugar babies for us to eat and to sell at the farmers market

You apparently have great time-manageement skills. (Feel free to share secrets re time-manageement. It could be an interesting experience.) I apologize for addressing my previous comment to Steph, I wasn't aware Buddy did the editing. No offense intended. Did you know you can freeze watermelon? It's a great winter treat to have 'garden fresh' watermelon. Of course all seeds must be removed. I would store the watermelon in zip-top freezer bags. You can also freeze the rind. I was hired to assistant a real estate agent friend setup for Open House events on higher value homes (at least in my opinion, $600,000 and up - back in the early 1980s). I was in charge of snacks. I would use my watermelon rind and fill it with watermelon, grapes, strawberries, pineapple chunks, shredded coconut (from a can), etc. (I cut the rind in a sawtooth pattern prior to freezing it.) It was always a big hit because it was unique. It was a treat to see Alora, Buddy and Steph in the kitchen together. I appreciate the repartee. Sorry, I forgot something. GA Lady is indeed Georgia Lady. When RUclips added the numbers they eliminated the space and caps. Go figure.

I FOUND IT!!!!! Watermelon rind preservers recipe 1 small watermelon, cubed after most the red meat has been removed. Place in large pot with 6c. sugar. Allow to slow boil for 4hrs occasionally stirring. When the meat is tender & juice is thick ladle into scalded jars & seal. I hope you try this & let us know! Enjoy!!! 🥳🥳🥳🥳👩🦳💜

Absolutely loved the gnome photo bomb. Adorable!! My grandmother’s recipe had more of a traditional pickling spice taste with cloves and/or cinnamon stick. Don’t remember it being salty or spicy. I do wish that I had that recipe if anyone else has a similar one please share. Grandparents came from Ohio.

Maybe it's just a Northern states thing, but we grew up on Watermelon pickles! 15-20 quarts a year! We always had a large bowl of rinds in the fridge, until there were enough to make pickles. Happy 4th to y'all!!

It's a southern thing as well. I grew up on a farm in East Texas. My grandmother made watermelon rind pickled and watermelon rind preserves.
