A friend of mine dehydrated her cucumber harvest. I was shocked! I’d never thought to try it. She swears that it is magnificent in winter when she throws them in a quick pickle brine to rehydrate.
I watched a show about camping many yrs ago, they were winter camping. One of them took dehydrated strawberries, soaked them in a little water, everyone was blown how fresh they tasted.
Oh my goodness your garden is beautiful. You certainly have a green thumb 👍. You would never go hungry. A fine example of how you can be self sufficient. 😊

You polycrub looks amazing. I am growing 'Thelma Sanders Sweet Potato' (which is a winter/acorn squash) this year which is an early cropper and is doing well, I have already had mature fruits from it, and pumpkins and winter squashes grow outdoors fine in my area. I am also growing 'Blue Banana' also a winter squash, but much further behind than the other one. It has bee a very good year for tomatoes, I have grown 'Ananas', 'Purple Ukraine (which I've grown other years), Golden Sunrise (a yellow salad tomato), Feo de Rigorda.
We found that all the strings we tried as supports gave way under weight and then my husband found a roll of telephone cable that we no longer needed and it has made brilliant strong supports.

First of all I really enjoy your videos! A little trick I unfortunately had to learn the hard way: if you build raised bed I really recommend installing dimpled sheets at the walls as it protects the wood from the moisture of the soil. My raised beds last much longer that way
Wow - what an amazing harvest! With those large cucumbers i would make sunomono salad, refrigerator bread and butter pickles (no canning required), and lots of tzatziki and greek salad of course using your tomatoes, pepper and onions if you have them.
What an awesome harvest! I love all of the flowers on the hill by the Polycrub! Great way to attract all the pollinators and other beneficial insects. When I see your eggplants, I want to make eggplant parmesan. I would make a big batch of gazpacho with the long cucumbers.
The wildflower bank has been such a big success! To think that area was just bare earth not that long ago...now it's bursting with colour and humming with bees :)

Oh my goodness what a wonderful harvest. So envious of your chillies and peppers. I grew them for the first time and the flowers kept dropping off, followed by the stalks. I cant see any at all. I shaded them, fed them, watered them and am at a loss really. I have lots of green tomatoes. I grew Tigerella as well. I hope they will ripen but if not I will definitely be making your green tomato chutney. A wonderful video Tanya.
Gorgeous polycrub and the harvest! Just wow. According the peppers - if you you grow several varieties close to each other, the can crosspollinate. So the sweet peppers can become spicy. Love your channel, have a beautiful week! XX
Cross pollination only affects the dna in the seeds :) So planting different types together makes no difference to taste of the peppers/fruit. If you save the seeds from the peppers though and grow new plants from them next year then sweet peppers can be spicier.
Great harvest! I had a successful tomato, cucumber, courgette, basil, apple and lots of other vegetables and fruits this year owing to the hot weather this year. I didn't grow as aubergine this year thinking they won't ripe, which I wish I did. I grow sweetcorn this year which I had Great success with it. Thanks for sharing your harvest and inspiration. I inherited a large home made greenhouse/pollytunnel/polycrub type structure on my new allotment plot. Coincidentally it’s the exact same size as yours (4m x7m) I’ve got more tomatoes than I can ever eat growing in there, plus loads of chillis and peppers as well. I’ve also attempted some passionfruit vines as well, although they havnt really taken off for some reason. I’ve got aubergines, cucumbers and cucamelons growing in my normal sized greenhouse as well. I’m going to watch with interest what you grow in that new polycrub, especially over the winter (are you planning anything once the tomatoes come out? I was thinking some winter salads in mine. Next year I’m not doing as many tomatoes (I really have gone too far) and I’ll grow some melons alongside tomatoes, cucumbers and probably aubergines. (With my normal greenhouse housing the peppers and chillis.
Sounds like a great set-up! I'm glad that I've put in a good mix of crops, but I'm especially happy with all of my tomatoes. Honestly, Black Krim is the best-tasting tomato I've ever had. Wow. As for this winter, yes, the Polycrub is going to have another flush of crops. I'm also going to be using it as a place to dry the laundry 😂 Keep an eye out for videos this autumn and winter

We have hot enough summers here in central Illinois zone 5b, but cool spring and Fall. Wondering how this has extended your growing time. We also have a lot of animal pressure, with squirrels, bunnies, and a groundhog, so thinking enclosed might help, though then concerned how hot it might get in July.
Only recently I've realized that what I think of as Mexican Cucumbers is probably just cucumbers in brine, pre-pickled; an acquired taste perhaps, but delicious!
Great Video! I enjoyed seeing all the before and after footage. Curious if you had to manually water inside the crub over the summer every day? Or is it recommended to get a drip irrigation type system when so many different types of plants are intermingling? Or just put water on dryer areas only? 😇
I am planning on putting in an irrigation system but haven't settled on the products or set up yet. Right now, I'm manually watering the beds every four days. If they weren't so big, and if I'd not sealed all the cracks between the planks with aquarium silicone, then I'm sure I'd be having to water more often!

I did start with hand pollinating a couple of squash and brushing the tomato flowers, but it was completely unnecessary. Like most garden spaces, grow flowering plants and the pollinators will come :)

I've personally not tried, but understand that fresh mustard seeds will grow without needing to be dried and/or stratified. Try some and see? Never hurts to experiment :)

What a fantastic harvest, this is amazing Tanya! Please can you share some more or your tips on how to preserve. Your green tomato chutney looks delicious and you have convinced me to start water bath canning. The only thing is, the mason jars with the two part lids are so expensive. You showed us your reusable lids, where can we get these from? This is a much more sustainable option if I am going to invest in this equipment. Previously I have been buying jars with one piece lids. Can you water bath these? If so how would you advise to do this?
I’ve water bath canned reused jars/lids many times without any sealing issues. I like the button top/lug lids as the seal is so easy to see. You can buy new lids for jars cheaply. Sometimes the lid gets damaged as the seal is so good they are hard to undo.
If your chillies are unexpectedly hot, they could be cross pollinating. Chillies and peppers are highly susceptible to cross pollinating and, if you grow different types together, they can take on the heat of the hottest in the grouping.
Chilies and peppers can and do cross-pollinate but it has no effect on the flavour or spiciness of the fruit. Just on the potential spiciness of the children of that pairing -- the plants that grow from cross-pollinated seeds. Think of cross-pollination like sex, because that's what it is. Imagine that having intercourse with a grumpy person makes you permanently grumpy. Well, perhaps that's the wrong analogy 😂😂

hi Tanya, were there any pest issues? If so, how did you deal with it? We dealt with aphids in mid to late summer, couldnt keep on top of it in the end, despite soapy water/oil spray and some marigolds.
Thank you :) The big trug is a thing of beauty, and I bought it from an artisan trug maker in Sussex. The rounder one isn't as sturdy and came from Sarah Raven. I wouldn't recommend that one, though, since the handle bends and I'm sure won't last. This is the artisan trug maker, though: trugmakers.co.uk/ The one I have is called the Daffodil.

Sorry, I can't advise on this. You will need to get the advice of a structural engineer and, most likely, planning permission from your local authority. Fun idea though :)
I have just had a polycrub built for me on a slope like yours. I notice your raised beds have not been levelled. We are having problems levelling them over the 9m length. Have you had water distribution problems or do they annoy you in any way by not being level? Are you happy with your compromise?
Tomatoes self pollinate (so that's not an issue) and I'm pretty sure Tanya leaves the doors open during the summer for fresh air & insects. Cucurbitae can easily be hand pollinated if needed :) Hope it helps.
If you look closely there are bees and insects in several of the clips. There's no lack of insects living in or visiting the Polycrub :) There are doors on either side and vents and gaps all along the sides.

I’ve just bought a dehydrator, not unpacked it yet but will dry herbs & lavender first then apple/ginger/blackberries for fruit leathers :)

Pickled Egg Plant is delicious. Asians like to pickle the little round white ones but I’m sure you could accomplish it with the big ones too.

Try soaking the ginger in water overnight as it's quite often sprayed with a chemical to prolong it's freshness.

Thank you :) The big trug is a thing of beauty, and I bought it from an artisan trug maker in Sussex. The rounder one isn't as sturdy and came from Sarah Raven. Sorry, I can't advise on this. You will need to get the advice of a structural engineer and, most likely, planning permission from your local authority. Fun idea though :)

I have just had a polycrub built for me on a slope like yours. I notice your raised beds have not been levelled. We are having problems levelling them over the 9m length. Have you had water distribution problems or do they annoy you in any way by not being level? Are you happy with your compromise?
I'm very pleased with mine and not noticing any issues, fortunately. I wouldn't bother leveling them off if the gradient isn't too steep.

How does pollination (wind & insect) happen in the polycrub?
Tomatoes self pollinate (so that's not an issue) and I'm pretty sure Tanya leaves the doors open during the summer for fresh air & insects. Cucurbitae can easily be hand pollinated if needed :) Hope it helps.
If you look closely there are bees and insects in several of the clips. There's no lack of insects living in or visiting the Polycrub :) There are doors on either side and vents and gaps all along the sides.
Only bad thing not everyone can afford a polycrub lol
