Really well done, Gents. I’ve made yolks (ala Mary’s Test Kitchen) quite often and it’s a bit easier using water, cornstarch, turmeric and kala namak - all in the microwave. The whites are done with round tofu cutouts. Use silken for poached and firm for fried. Thanks for this vid! 👍
If you needed some easy vegan egg white ideas, why didn't you just ask the community? Would be great to see you with the same creativity you started out with again :)
I make my v'egg like this: I cut out rounds from about a 1" slab of firm silken tofu, using a cookie cutter or the top of a drinking glass. Then place it in the tomato mixture, scoop out a center piece, with a spoon or melon baller, and fill with my favorite mustard. Pretty good approximation.
I actually think this recipe would be delicious with the Shakshuka and better than the egg I posed. Because they is a sweet flavor to the Shakshuka so the yogurt will go will.

I feel like the egg could be upgraded to something better. Great recipe otherwise , I just think I will use a different egg sub

at least a bit of black salt could have been added...
@@rcsmit or back salt which is rich in sulfur, eggy flavour. This looks a bit like a yogurt dip.
