Lovely! We have a very tiny rectangular smoker which we use for smoking trout fillets when my OH gets lucky on the river! He’s not keen on me buying cheap salmon any more because of the health and environmental issues so it’s back to an occasional indulgence with more expensive stuff. Still my favourite fish. Lovely and fatty for us Keto gals! 😅
Absolutely Lynne! I have been hitting the carbs pretty hard over the past 2 months with filming (and recovering post filming!), am back on about 30g a day now and already feeling better. Easing myself back down to 20g. Funny how I've become obsessed about food again, just after a couple of months. Looking forward to the mental calmness keto brings me around food :)
You pronounced Mesquite just fine. Here in Oklahoma we have all 3 woods but Mesquite does not grow on my side of the state. Well done and all the best. John.

Very nice! If you want a slow more controlled smoke, wrap the wood in foil and pop a couple of holes in.

I actually tried this method on salmon myself. Unfortunately the smoke wasn't strong enough to penetrate the tin.
