Chicken Cobbler (with vegetables)

  • 2 large chicken breasts, boiled and shredded
    10-oz bag frozen mixed vegetables
    1 medium onion, chopped
    1/2 red bell pepper, chopped
    1 stalk celery, chopped
    1 Tablespoon minced garlic
    1 stick melted butter
    1 1/2 cups self-rising flour
    1 cup whole buttermilk
    1/2 cup water
    3 cups chicken stock
    2 cans cream of chicken soup
    Mix the chicken and vegetables well. Sauté the onions, bell pepper, and celery in a little butter for about 8 minutes. Add garlic and sauté 1 minute more. Mix the cooked vegetables in with the chicken and frozen vegetables. Pour in a large casserole dish. Pour the butter over the chicken mixture. In a medium bowl, mix the flour with the buttermilk and water. Pour over the mixture over the chicken. Do not mix. In the same bowl, whisk the stock and cream of chicken until smooth and pour it over the flour layer. Again, do not mix. Bake on 350° for about an hour. Increase heat to 375° and bake another 30 to 35 minutes. Allow dish to sit for at least 15 to 20 minutes before serving.

    What can I use instead of butter milk as in the uk 🇬🇧 I don’t know what the substitute would be

      @nova_ashworth91150 you could use regular whole milk. You can also add 1 teaspoon of vinegar to whole milk, allow it to sit for 3 or 4 minutes, and it will turn to buttermilk.
