Oatmeal cookie bar No eggs/ dairy/ flour One cup ground oatmeal (I use my coffee grinder) One cup additional oatmeal whole 1/4 cup oil (I use butter or coconut oil) 1/4 cup or however sweet you want them adjust this brown sugar or whatever sweetener (I also add a little honey, Honey😊) 3/4 teaspoon baking powder Vanilla Some nuts 3 tablespoons almond milk or other liquid Could add cinnamon if you like Make into balls and gently press down but not all the way. Bake at your cookie setting for 20 minutes or so. They crumble but are still delicious. Cheap ingredients too. Found this on the internet somewhere but changed a little for our family. Can make a little frosting to dribble over them if you want to get fancy)

When you say additional whole oatmeal do you mean whole oats or the oats that were ground in the coffee grinder or yes oatmeal.
This recipe sounds delicious and I took a screenshot, but I’m confused on the oatmeal whole. Is that a different style oatmeal?

I make quiche or a frittata with squash and root vegetables. We also enjoy breakfast burritos. These both can be made ahead.
